Hi! I am on phase 2 of SB and am craving homemade green chili. How is the best way to thicken soups without greatly increasing the glycemic load?
You can thicken with something called arrowroot which is low glycemic, although it does give the food kind of a shiny look compared to other thickeners. There's some info online about it if you want to read and see if you think you'll like it. I've also used whole wheat flour to thicken sometimes. Most often though I thicken things by just cooking the liquid down a little.
The recipe for black bean chili with lime cilantro and avocado salsa sounds great but isn't lime a fruit, to be avoided on Phase One? Thanks!
Lime is a fruit, but lemon juice and lime juice are both listed as okay for phase one in the latest South Beach book.
hey, kalyn: any thoughts on how best to create a chowder like soup? beans instead of potatoes for the creaminess/starchiness?
You could use something like turnips or jicama to replace the potatoes. That's the only two things I can think of.
