Cilantro Caesar Chicken Salad

Recently at Costco I purchased El Torito brand Cilantro Pepita Caesar salad dressing (they were demo-ing it, and I'm a sucker for those demos). It has 2 carbs (1 g. sugar) in 2 T, so it's an acceptable choice for the South Beach Diet. I used it to make my own version of Rubios Grilled Chicken Chopped Salad (one of my favorite fast food options). Everything in this dish is great for the south Beach Diet.

Cilantro Caesar Chicken Salad

1 grilled chicken breast, diced
(I used a stove-top grill pan to cook a chicken breast)
2-3 cups torn romaine lettuce
1 cup chopped red cabbage
1/2 cup diced tomatoes
2 T Cilantro Pepito Caesar dressing

Drizzle a tiny bit of olive oil on chicken breast, then season chicken with poultry seasoning and Spike Seasoning and grill until done. (Or use leftover chicken and save this step.) When chicken is nicely grilled and firm, cut into bite sized pieces. Tear lettuce and chop cabbage and tomatoes while chicken cooks. In salad bowl layer romaine, red cabbage, tomatoes and chicken. Top with dressing.

This was great for lunch. You could put lots of other things in the salad:
diced red pepper
diced cucumber
diced cauliflower
grated cheese
sunflower seeds
