How to Contact Kalyn

Thanks for Your Interest!
Kalyn's Kitchen is my personal blog, where I share recipes I'm cooking in my own kitchen. I'm a fan of the South Beach Diet, and unless otherwise noted, I try to make my recipes suitable for the low-glycemic index way of eating made popular by that diet. This site is not directly affiliated with The South Beach Diet, and any information or suggestions provided here are merely my opinion. If you're interested in Getting Started on the South Beach Diet, I always recommend reading the book first so you understand the science behind this way of eating.

But not everyone who reads this blog is a follower of the South Beach Diet, so in 2013 I gave my blog a makeover, adding Recipe Labels so it's easier to find recipes for many other types of diets.   Just click any of the category labels in the new second row of tabs below, and you can scroll through all the recipes on the site that are suitable for that type of diet.  (Here's more about how the new categories work.)

Answering Questions from Readers:
I love to hear from people who are readers of Kalyn's Kitchen and will do my best to answer simple questions, although I don't have the training or the time to give full-fledged dieting advice. If your question is about a specific recipe, please consider leaving it as a comment on that post so others can benefit from the answer.

This blog is about what I'm cooking in my own kitchen, so I'm only interested in talking about cookbooks or products I'm personally using and would happily buy again. Because I have limited time to try new products or cookbooks, I have decided to no longer accept books or other products for review.  I do love to mention cookbooks I'm using and talk about my favorite products on the blog, but when I do that I enjoy being able to tell my readers that I bought them myself.

There are so many food bloggers writing cookbooks these days, and I try to buy as many as I can to be supportive to my fellow bloggers.  If you're a food blogger who has written a book, feel free to drop me a line to let me know about it and if it interests me I'll be happy to buy your book.

This blog is a godsend! My hubby and I are just finishing our Phase 1 of SB and are so amazed by the results. I have never followed such an easy plan... however, we were looking for more meal ideas and, lo and behold, I found your amazing blog filled with pleasing recipes and great comments. Thanks so much for all your hard work - I, too am a full-time teacher and know how stressful life can be as an educator... but I am definitely glad you take the time to maintain such a great site. I really like your Chipotle Ranch Dressing - the best flavor I have found so far is with Hidden Valley Ranch buttermilk packets the issue is that HV includes MSG..so I am trying to find an alternative that tastes as good. I have tried about 4 different kinds ... all not as good as when I make it with HV buttermilk.

Has anyone ever tried the Penzey Spice Buttermilk Ranch? Is it good?

Just thought I would ask before I ordered a large bag.

I did try the Penzeys buttermilk dressing mix once (long time ago) and was not impressed. I use the Hidden Valley Ranch type and when I wrote an article for Blogher.com about the safety of msg I was very surprised to discover that the conclusion of most studies is that it's not harmful. I'm not trying to convince you to use it, I just thought you might not have heard the latest about it. Anyway, good luck finding something you like. I just bought a big bottle of Uncle Dan's Classic Ranch salad dressing mix at Costco, but didn't try it yet.

Anonymous, I only post recipes that I've tried and photographed. I would recommend either buying the book or looking at it in a bookstore. It wouldn't be fair to the book publisher or my readers to start posting recipes I haven't even tried, and I can barely keep up with the recipes on my own "to-try list" (I teach school all day) so I can't really take requests about what to cook, sorry.

Love your blog!....it has been a life-saver to me, it has helped me immensely stay on track with South Beach. I tried the peanut butter oatmeal, but used almond butter and a sprinkle of poppyseed and made it into almond-poppyseed oatmeal. Let me tell you, YUMMMMMMMMM!

Tanya, South Beach is based on the glycemic index, and honey and maple syrup are both going to be very high. Definitely for phase one and probably phase two they wouldn't be permitted. Ingredients like this can be used in very small amounts, such as in a salad dressing or marinade. You might want to check out agave nectar, which is a low glycemic natural sweetener very similar to honey. If you enter it into the google search bar on my site you can find some things I've written about it.

Hi there, I just wanted to tell you I have been on the South Beach Diet as well and started back in July 2006 and now currently I am at Phase 3 and have lost 91 pounds. I was 230 pounds at the beginning and now down to 140 pounds. I am continuing the maintenance phase for the rest of my life so I can stay at this weight. I believe the South Beach Diet has alot of solid fundamentals and principles into what we should eat and not eat. Obesity is a problem in this country and Dr. Arthur Agatston said it is a leading contributor to heart disease and heart attacks. I have cut down completely on many of the bad foods I used to eat and now I eat more salads, high protein meats, seafood, reduced fat cheeses, and egg substitutes and green tea. I would have to say I have been sticking with the plan and it has worked as far as eating the right types of foods. Life is better on the South Beach Diet and it is the number one diet of all the diets out there in my opinion.

I did see your section about whole wheat bread and now there are some new varietys in the Walmart's out there. Nature's Own makes one that is a Double Fiber Whole Wheat bread with Omega 3. I still try to stay away from all bread but Dr. Agatston said whole wheat, multi grain or rye bread is ok. If they would get that high fructose corn syrup and the sugars out of the bread it would be better. I do check the ingredients label. I might have picked up a bad variety because it had that word enriched wheat flour listed in the middle of the ingredients. It is 50 calories per slice. Maybe they should sweeten these whole wheat breads with sucralose instead.

I believe I read in the South Beach Diet book that the more fiber that we take in breaks down whatever sugar that we do have. I believe in staying away from alot of sugar and increasing fiber. I have seen alot of sugar free products out there and even some of the whole wheat breads they may say are sugar free but I'm sure there is a sweetener or molasses that they make up for in the ingredients. I know we need some sugar in us but I do try to keep it to a minimum. What are your thoughts on the fiber and sugar balance?

I followed South Beach pretty religiously a few year ago. One of my favorite recipes was for a mocha smoothie made with cottage cheese, fat-free half & half, ice, and instant mocha mix (fat-free & sugar-free). I cannot find that recipe anywhere, and I don't remember the exact amounts used! Are you familiar with it? If so, could you send it my way?

Have you tried dreamfields pasta? It is supposed to be low carb, high fiber. I was just wondering if you knew anything about it and if it is allowed on the S.B. diet.

I have a lot of recipes using Dreamfields, and have written about the pasta too. I've never seen anything from South Beach officially saying it's approved, but I ate it all the time I was dieting most strictly and it didn't stop my weight loss.

You could find the recipes and posts I've written about it by entering "Dreamfields Pasta" in the search bar in the upper left column.

Laura, nearly every company that makes chicken and beef stock or bouillon cubes also makes vegetable stock. Any supermarket should have it by the canned stock, or vegetable bouillon cubes by the beef and chicken cubes. You could also get it online, I would just google "vegetable bouillon cubes."

Anonymous, there's no way for me to know what foods you like and I'm afraid I just don't have time to make menu suggestions for people's specific needs. I suggest you look through the recipe archives (left sidebar) and see what looks good to you. Maybe start with Easy South Beach Recipes if you don't have much time.

My own favorite lunch is definitely Taco salad, you could start with that recipe.

Mine is also a food blog but way more simple and basic, just what I call cheat-cheat recipes. I am very interested in your blog for several reasons, though. One, it's about healthy food. Two, I'm also a teacher! Three, I'm very interested in weight loss and healthy eating, especially the SBD. I found a couple of recipes on another blog for "fake french toast" where they are sweetening eggs with splenda and cinnamon and some add ricotta cheese and make a batter out of it. Someone thought to top it with SF syrup. Have you ever tried this? I'm anxious to see a more professional testing of this.

Stephanie, haven't seen that recipe before, but from the ingredients you've described it sounds like it should be okay for South Beach. (This is only my opinion, I'm not an expert!) I'm not a big sweets eater, so I haven't used the sugar free syrup that much. Lots of times it has sugar alcohol, which can cause gas, so be aware of that if you try it. If you do make it, let us know how it turns out.

Hi Kalyn! I just wanted to comment on your phase one snack colum! I did SBD a few years ago, and it works Great! I wanted to let you know about a cool trick i figured out for measureing out nuts. Your supposed to have 1 oz right??? DIXIE CUPS! theyre easy to dip into the jars, and are perfect measurement. Plus, it makes it easy to transport in your car.

Rob, it's not software, but I use an online bookmarking site called del.icio.us to store links to the recipes I want to save. You can use tags to create categories and give the recipe any title you'd like.

Anna, since this comment is right under the comment about del.icio.us, first I want to make sure that all the recipes I've saved on del.icio.us are not South Beach diet recipes. Hopefully you're just talking about the blog.

Not sure why you would have gained three pounds on phase one? You might want to check the food lists in the South Beach book again to be sure you're doing it right. Good luck.

I want to thank you for your site. I'm in my third week of menu planning in my pursuit to take the stress out of "what's for dinner" and to be more organized. Even though I'm no longer working, (job as a media specialist cut due to budget) I was still in the old habit of waiting till the last minute to figure out dinner. Your site has been a blessing! I see what recipes look good and what recipes you suggest to pair, type it in my menu spreadsheet and insert a hyperlink. This makes having the recipe on hand when I'm ready to cook a snap. I do my planning a week at a time. I'm using a template I found at http://penniesnpounds.blogspot.com/2008/08/numbers-template-for-meal-planning.html.
The fact that you have "South Beach" recipes has also prompted me to start back on the diet. I love how you organize your site with the different sections.

I am so glad I found this site. I am just starting the South Beach diet with my 18 year old daughter. I get the basic concept of the plan, but I am a bit confused on phase one and dairy. In the "rules" it says no milk for breakfast, lunch and dinner. I like to put a little skim milk in my coffee. Will that cause any issues with the diet? Also, my daughter loves milk and would like to drink up to a glass per day in phase one. Will that affect her progress?

Anonymous, I'm not qualified (and don't have time!) to answer specific questions about the diet, but I'm thinking you should check the book because in my book it says "milk fat free or 1%, buttermilk fat free or 1%, and yogurt fat free" are okay for phase one.

I just found this wonderful site!! I have found Spike seasoning in several recipes. Somewhere in the site I saw that it could be purchased on Amazon. I was interested if this seasoning can be found locally -- I live in Ogden. I want to cook some breakfast recipes this weekend.

Anonymous, I'm quite sure you can find it in Ogden. In Salt Lake I can get it at Smiths, Whole Foods, or Albertsons. It's often by the health foods and not by the spices in some grocery stores. If you don't find it in one of those places I'm pretty sure a health foods store would have it.

I just saw Dreamfields pasta today at the Smiths on 400 South and 5th East. They only have spaghetti, linguini, penne, and macaroni though. I also find it at the Smiths on 2100 South and 9th East. I know you can order it from Amazon.com too. If Smiths stopped carrying it, I'd definitely buy it online, that's how much I like it.

I was getting a little tired of the recipes from my South Beach cookbook and finding a hard time finding ingredients here in northern MN but yours are easy recipes and we have all that I need at our local grocery store! My question is, would you consider quinoa a grain and not allowed until phase 2 or is it allowed(in moderation, of course) for phase 1 since it is a complete protein and not technically a grain? Also, with the farinata, would it be okay to use it for "breadcrumbs" during phase 1? Thank you so much!

Sarah, brilliant idea to use the Farinata as breadcrumbs! I will be trying that.

I used to think quinoa was a seed and would be okay for phase 1, but I saw it on an official South Beach list somewhere listed as phase 2. I don't remember where it was, sorry. So if you're really trying to be strict, I'd say wait a couple weeks before adding it.

I'm a fairly new 7th grade teacher and over the past few years the pounds have crept on - something quick while grading, etc, that's usually not too healthy. I'm now almost 20lbs over my target weight. My New Year's Resolution is to Get Fine in '09! A coworker of mine went to see his doctor recently and was told that he needs to lose 20-30lbs immediately because he's risking diabetes at this point. The doctor suggested South Beach.
So I've been perusing the internet and checking to see if it's something I can handle - now I'm pretty excited! I love to cook, but only get to do so on the weekends generally, but many of your recipes are pretty basic and I think I can do it. My co-worker and I are each taking responsibility for the lunch and snack portion of 2 days a week, leaving the fifth as a "fend for yourself" or leftover day. We're pretty pumped. Thanks for the great site, and congrats on getting so healthy!

Kayln, to say I was thrilled to find your blog is an understatement. It's my one stop for all the South Beach Diet recipes I could hope for. I've bought all the books, but you and your readers find so many interesting variations, that they open up a myriad of new ways to prepare and cook the healthful meals.

My husband and I, both actors here in New York, are in the middle of the first week of Phase Two. It's important for us to look good, as I'm sure you remember the old adage "the camera puts 10 lbs on you." Followed by the update that is attributed to the Ross character on "Friends": "Really? How many cameras did they shoot you with?"

After coming home from visiting my step daughter and her family, down south, where everything is fried and salted, I stepped on the scale and saw something I hadn't seen in six years...the needle went past 150!! I had been on the South Beach Diet starting in 2003 and had lost 26 lbs., and pretty much kept it off for three years. Then after a, once in a lifetime, vacation "down under", the pounds started to creep back up. Like so many others, on January 1, we started the South Beach Diet, once again. This time I find that it's somewhat easier. Also I don't get discouraged easily as I've learned to step away from the scale. Once a week is plenty. I've also found another helpful hint, using really good non-stick cookware. It cuts down on the fat, and it soooo easy to clean.

Well, as I wrote earlier, I love reading the recipes you post, and hopefully will be able to post some of my own variations.

Your food blog is simply the best around! Not only do I love your recipes, but the site is friendly, accessible, and down to earth. You pepper your blog and recipes with great ideas, suggestions, tips, and most of all, support. It's a pleasant place to visit and I rarely find a recipe that I can't wait to try.

My husband and I began South Beach a little over a month ago, primarily to control his trigylcerides (first test results due this Friday!)- I have lost ten pounds thus far and he's lost fifteen so with any luck the blood chemistry is improving as well.

I love to cook and we both enjoy eating so your site is a joy. If I ever stand in my kitchen with a knife in one hand and a pound of something in the other and can't quite decide what to make for the evening, I just think, "I wonder what recipes Kalyn has to sugggest?" and I go to your search engine tool to come up with something new.

My husband works a very high stress job and right now, he is very motiviated and driven to stay on this diet until his goals are met. I'm quite proud of him, but I also know that the food makes a big difference. If he bores of the meals, he'll bore of the diet and when I start to stall, your site keeps my creative juices flowing in the kitchen.

I have told others about your site and will continue to do so, many times over.

Hi Kalyn, I read your blog at least once a day and I'm a big fan. My problem is trying to learn to follow the south beach diet in India as we mostly eat a Indian meal for lunch and dinner. Its hard to plan the menus and stick to no carb meals entirely. Can you help me with some pointers as to how to just get started..
I have made some soups from the recipes on your blog - the chickpea one is a favourite at home.

Nice to know you're a fan of the blog. I'm not sure what to offer for advice (actually I don't know for sure what you mean by "an Indian meal." But I don't think you have to avoid carbs entirely to be successful on the diet. I know that Dr. Agatston advises people to sometimes just start with phase two if they find phase one too difficult. I think if you avoid white flour, potatoes, and starchy white rice and eat mostly vegetables, low-fat protein, and dried beans and legumes you will lose weight. Basmati rice is actually pretty low glycemic, and Indian dals and curries should be goood too. Good luck.

Jenn, I'm not sure I want to start a new section for lunches, but I can give some suggestions. Maybe I can do a post about it occasionally.

Actually, I just take whatever I'm cooking that week for lunch for the most part, because I work in a school where we have a microwave. I eat soup a lot for lunch in the winter, and salads when the weather is warmer. Today I had leftover avocado and tomato salad for lunch, with a piece of whole wheat bread. Actually the thing I eat most of all for lunch is probably taco salad. I made the meat and freeze in small containers, then take the lettuce, meat, cheese, tomatoes, and dressing separately and combine at lunch time. Another favorite for lunch is black bean chili.

Hope those ideas are helpful.

Joanne, glad you are enjoying the blog. I'm not familiar with that cereal, but check the label and if it has all whole grains, and no trans fats or sugar it should be okay. I would pay special attention to the sugar grams; it should be only a few grams of sugar per serving.

Desirae, I'm not a fan of Sweet Potato Pie, but you could adapt a recipe using Splenda or even Brown Sugar-Splenda blend. I do love this recipe for Soy Glazed Sweet Potatoes. They're actually fairly sweet and don't really taste much like soy sauce, just slightly salty.

Mindymom, Bon Appetit is a spice blend. In the U.S. I use McCormick brand, which you might be able to find online. The ingredient list on the bottle says "salt, MSG, celery seed, and onion." I've also used something called Beau Monde seasoning, which has a similar flavor. If you can't find those, I'd just grind together some salt, celery seed, and dried onion and it would be very close.

I wanted to start South Beach for years but thought Phase 1 would be too difficult. Then one day just by chance I found your website. I know this sounds silly but I cried. It was just the right time for me to find this. I'm am not cooking savy at all especially with herbs and vegetables. I have printed & tried many recipes and I have lost 8 lbs in 3 weeks. I am now on Phase 2 and find I'm missing Phase 1. You have helped me more than words can express. I just wanted to let you know how much you are appreciated.
By the way, my favorite recipe is your Cauliflower Au Gratin with Sharp Cheddar Cheese & Parmesan. OMG, it is the bomb.

hey! i love this place of yours...i stumbled upon it about a week ago while searching for some awesome, healthy recipes...which i found! :) good job btw, you've contributed to a week of amazing suppers at my house...needless to say, i'm nearing the end of my very first 'official' day on SB. it's ridiculous how excited i am about it cause it's promising for weight-loss but more importantly, so good for your body on the inside too. i feel incredibly strong urges to discuss it with anyone who crosses my path...however, i mostly manage to control myself.
anyway, there's a point to this comment and it is that although there are recipes in the book that include avocados, there is no real discussion on them. i assume they're acceptable...but i'm unsure and as we are huge fans, i don't want to sabatoge our first phase by overdoing it.
if you could let me know, i'd totally appreciate it. and again, you're doing such an incredible job. i appreciate finding such a wonderful site...blog? whatever it is, i like it.

Hi Kalyn, Your blog is truly remarkable and helpful on so many levels for a beginning cook like myself. As with most folks, I've been recommended by my doctor to follow a more healthful eating style and his guidelines are very similar to south beach - just a bit more restrictive to fit my needs. So I have a general question - a lot of your recipes use olive oil, and if not for that one ingredient, the recipes would meet the criteria. A specific example is Roasted Broccoli with Lemon and Percorino-Romano Cheese -do you have a suggestion as to what one could substitute when that ingredient is called for? I can't use any oils - peanut, canola etc. in cooking. In general is olive oil used as flavoring or simply as a binding for other ingredients? I appreciate any hints you can provide.

Anonymous, olive oil has many uses in cooking, so it's different in each recipe. In some recipes it could certainly be cut down, like the roasted vegetables, but I think without any oil at all the food will stick to the pan. If you have a way to solve that, try it without the oil. In salad dressings and marinades I think you could substitute stock or fruit juice for olive oil in some cases, but it's not something I've experimented with. Good luck.

The Pistachio Cookie recipe reminded me "The Heart-Healthiest Chocolate Chip Cookies in the World" recipe printed in Vegetarian Times magazine Feb 09. Due to readers' positive respose it was reprinted again in the magazine Nov/Dec 09 issue. Ground walnuts are used in place of eggs and butter and instead of flour, uses a blend oat flour and rolled oats. The cookies are delicious so I am looking forward to trying these Pistacio cookies as well. Thanks for all the great recipes you post.

The whole grain chocolate cookies are delicious! I was looking for a cookie like this and am so glad you had it today. I did use white whole wheat, 1/4 cup light brown sugar and 1/4 cup regular sugar instead of the Splenda, walnuts in place of the pecans and dark cocoa.

Kalyn, My husband has just started on SB and I'm trying to make good things for him. I made the cheesecake with ricotta. Is there a reason not to use Fat Free Cream cheese instead of ricotta? I've made sugar free, fat free cheesecakes and there yummy.

The latest book says to limit cream cheese (fat free or light) to 2 T per day, so probably that should be saved for phase two. I actually didn't realize that until I just looked it up, so now I'm going to check my cheesecake recipes!

I'm not a fan of fat free products because they often have added sugar to replace the fat. When you buy dairy products, check the label and make sure it doesn't have more sugar than the reduced fat variety.

I'm not sure what is making you think the Ham and Cabbage Soup might be phase one, because it says this in the recipe:

"With all the healthful and low-glycemic cabbage, this soup is a great choice for the South Beach Diet, although it would be phase two with the carrots. I think this would still be great without carrots if you wanted to make it for phase one though, maybe adding some chopped celery or even more onion. "

The zucchini muffins say WHITE WHOLE WHEAT. This is a type of whole wheat flour that's light in color. You're right that white flour isn't recommended.

While searching the net for phase 1 SB + gluten free I was sent to another website which has a recipe with quinoa in it for Phase 1. I thought grains were not allowed in phase 1. Could you please clear this up for me.

Anonymous, I do think quinoa is kind of confusing since it's a seed and not technically a grain. For a while I thought it might be okay for phase one, but then I did read somewhere that it's not allowed until phase two. Sorry, I can't remember where I read that but I would recommend saving it for phase two.

I have recently started the SB diet oer doctors orders. I have PCOS and I am trying to lose some weight to hepl get pregnant. I bought the SB diet book, "Super charged" and Though it has a day by day guid for phase one....I simply could not eat 5 out of the 10 recipes. So I have been on phase One for almost three weeks because I keep falling off the wagon. Not in a terrible way where I am eating chocolate fudge and pizza. But sneaking in some creamer in my coffee and using 2% milk versus 1%.
I was starving for 1 1/2 weeks because I could not find any good recipes online, that is until I found your blog. I am scanning your blog all night to create a shopping list for the store tomorrow.
Thank GOD I found your blog. It may be the one website that could keep me on this diet. I cannot afford to keep this weight on any longer. I have yet to have any success in 3 weeks. Not a single pound lost. But, I have to give it time.

I just wanted to say thank you for creating such a wonderful well laid out blog. Also I would like to say as a fellow photog, I think all your photo's are simply beautiful!

If you have any suggestions on some easy recipes for phase one....please by all means.

Anonymous, your question makes me wonder whether you've read the South Beach Diet book. I don't count carbs, and the diet doesn't really recommend it. The main thing about this diet is learning what foods are allowed, and then planning menus and knowing what foods to eat is relatively easy. You can get the book from the library if you don't want to buy it; I do recommend reading it.

I chose the South Beach Diet to manage my weight because I didn't want to count calories, carbs, or weight-watchers points, so people who want to know the nutritional information will have to calculate it themselves. I think there are some sites online where you can input the ingredients and number of servings and it will calculate for you.

I'm new to Facebook and also blog posting so I may not be doing this right. I tried to find a way to post a question on your Facebook wall, to no avail.

In any case, I saw your recipe for the tuna stuffed avocado. That reminded me of when I used to live in Jacksonville, Florida about 22 years ago. There was a restaurant near the intercoastal waterway (no longer there) that served crab stuffed avocado. I have never run across these before. This was SO delicious I've never forgotten it. I'm trying to remember what all it had in it, but in addition to the fresh crab there were several tasty ingredients, all served in two avocado halves. I know this sounds crazy but I almost think it might have included pineapple, though that doesn't *sound* like it would be a good combination. Have you ever run across a good recipe for avocado stuffed crab? I would really like to have one!

Your blog is fantastic! I love the huge variety of South Beach recipes (and all the wonderful photos that go with them). I took some inspiration from your sugar free flourless cookie recipes and did some baking today. I just wanted to pass on the recipe I ended up putting together if you are looking for another addition to your already great south beach dessert recipes:

Almonds ½ cup
Walnuts 1 cup
Almond butter 1/2 cup
Splenda – ½ cup
Baking Powder – 1 tsp
Vanilla extract – 1 tsp
Egg whites – 3 tbsps
Starbucks cinnamon dolce syrup (sugar free) – 1 tbsp

Grind nuts in food processor then combine with other ingredients and mix well. Form into balls and press down with back of spoon. Bake at 350 degrees for 18 minutes.

Just trim the basil like I described in the post, but cut off the flowers and throw them away, then chop up the basil leaves with olive oil and freeze.

I did not beat the egg whites before adding to the rest of the mixture although I guess if they were beaten first it would add a bit more volume to the mixture and may make for a lighter cookie. I would substitute cinnamon and maybe a touch more splenda in place of the cinnamon dolce syrup. The syrup has a hint of caramel flavour as well - I'm not sure what would be best to replicate that though....

Hi Kalyn, My husband and I will be starting SB diet.I am trying to get recipes that don't have any milk (breakfast).Snacks are a huge problem as cheese tends to be a big choice.Any suggestions, other than what's in the SB diet book? Also any suggestions on how to make it from after dinner to bedtime without going crazy.Could use some suggestions for desserts (no milk). Thanks for all your hard work, this makes me hopeful that we can actually succeed at this diet.

It sounds like you'll need to use the search bar and recipe index to find recipes that either don't contain dairy or things (like breakfast casseroles) where the cheese can be left out. I know there is a post on snacks (which you can find by entering "snacks" into the search bar.) As for desserts, the only suggestions I have are the ones listed in the index. (Sorry, but I don't have time to find recipes and give personal suggestions about what people should eat; that's why I've spent many hours making the recipe index easy to use.)

Good luck! The diet will work if you stick with it; I'm sure of that.

I just want to say how incredibly impressed I am with you, your dedication and your blog... way to go, my friend! Thank you for what you are doing each day to help so many. I am currently helping a friend who was diagnosed with Type2 diabetes and although I am a product of heathy choices, healthy eating and a life in the the restaurant business, it's nice to know I have a "friend" I can turn to when I need help and new ideas.

I love your recipes and have tried several and my husband and I have really enjoyed them. My question is, have you ever thought about creating an online meal plan? I am trying to lose weight and because I am eating a totally different way than from how I was raised, I am useless when it comes to thinking of ideas in the kitchen. I have seen "2 weeks" meal plans in diet books, but they include recipes for meals I would not be able to find ingredients for or stuff I would not eat. Your recipes are easy to make and I can find items at my local grocery store. I know what you are thinking- "Another blog! What!! I don't have time for this one!" LOL!! Do you have any suggestions? Thanks again!

Kim, I appreciate the vote of confidence, but I don't think that's something I'd ever want to do. (I don't even plan out my own meals for more than a day at a time, if that!)
I can barely keep up with the blog, and I'm not an expert in the diet either, so I don't know that I'm qualified to make those kinds of recommendations.

Yummy Yummy "Low Carb" Stuffed Mushrooms
.by Julie Coggins on Tuesday, August 31, 2010 at 9:28am. No calorie cooking spray

12 mushroom caps

4 strips turkey bacon

1 onion diced

1/2 cup green pepper

6 low moisture/ lowfat mozzarella slices



Use a cookie sheet or baking pan.

Spray with cooking spray for no sticking.

Line mushroom caps.

Spray caps with cooking spray.



Spray cooking spray on skillet. Cook Bacon, Onion, and Green peppers on med-high heat until lightly browned. Fill caps with Bacon mixture. Put 1/2 of mozzarella slice on each cap. Bake for 15 minutes or until cheese is browned.

I know you get hundreds of messages, but I still wanted to tell you how grateful I am that you made this blog and post all those incredible ideas! Just very recently my cousin inspired me to try the SBD, I had never heard of it. Although I am a doctor (and you should think we learned about nutrition and how the body reacts to different foods in med school.......) I really have tried to figure out how I can eat, not be hungry, and not keep gaining weight. And although I tried a kind-of freestyle Weight Watchers some years back (and lost about 35 pounds), I gained it all back when I started to work in a hospital where it was really stressful, and I was eating all kinds of crap on the go, just to survive from sugar-low to sugar-low. Now I finally understand the carb mechanism! What an insight. As I am eating only very little meat (due to having a kosher kitchen where it is rather difficult to just quickly make some turkey breast, as it involves a lot of rearranging and cleaning etc) I needed to really dig into lowfat cheese and eggs. Your egg-recepies are a revelation! In fact, I just pulled the breakfast casserole with asparagus and mushrooms out of the oven. And just now tried your method of hard-boiling eggs (it works! They are perfect!)

The egg muffins have worked really well, too, and provided lunch for a week.

I also tried a sweet variety of the egg muffins: Used some rhubarb (vegetable Phase 1!), sweetened it with stevia (guess you could use splenda), and mixed some ricotta and ground nuts with the eggs. Not bad.

So far, I hated diets, as they always mean to be hungry, hungry, hungry. Not anymore! I am really curious to see how much weight I can lose on this feast... According to the SBD book I might be a little more challenged, as I am a "pear" and not an "apple", but hey, with your recipes to add variation and provide inspiration, it should not be all that much of a problem.

What a lovely collection of recipes - thank you! I'm in Phase One of South Beach and would love to know more about your personal experience with this diet. You lost 42 pounds which is about the same amount I'd like to lose. Besides following the Diet, what else did you do? How long did it take you to lose that weight?

Mary Ann, I wish I could tell you more, but it was nearly 7 years ago that I first started the diet, and it's a bit foggy in my memory. I know that I lost about 35 pounds fairly quickly, but it took me nearly a year to lose those last 7 pounds (although I may not have been trying as hard as I could!) I probably did Walk Away the Pounds at least a few times a week, because I've been doing that for quite a few years. I have been eating this way ever since then (with some splurges for holidays and special occasions.) My weight fluctuates up and down about 5-7 pounds but I never let it get much higher than that. If it does, I go back to phase one for a few weeks.

Good luck with the diet. I know it will work if you stick with it!

I LOVE LOVE LOVE your site! I can not even tell you how excited I was to find it. My husband and I did southbeach 2 years ago after I had my first baby, and were very successful at it. (75 pounds total!) Now after baby number 2, we need to get back into it. I do have to admit when we started it last time, that I was very discouraged by the recipes that I had found. I love to cook, and not being able to find variety, and good recipes was the hardest part for me. I have all the southbeach cookbooks, I made up a lot of my own last time, and found a few good ones on other sites, but nothing like what you have! I almost ran out of ink printing the recipes that I want to try! We may even be able to go on 4 weeks of phase 1 with no problem! Your pictures are amazing, and your so descriptive! I love how you put your own little hints in the recipes. I wish that I would have found this website 2 years ago. It would have been a lot easier to stay on track for a lifetime! Thank you so much for your hard work! This site is a MUST HAVE for any southbeacher!
I have signed up for your E-mails and look forward to them, and to trying all the recipes that I have printed!
I do actually have just one question... you mentioned in one of your posts that you were going to message someone about the black bean brownie recipe... I found that in the new cook book that southbeach has.. Did you have a bad opinion of it or something? Thank you for your frozen tomato sauce recipe. It seems simple and that's what I like!! I'm 71 and my canning days are over. And, there aren't a ton of ingredients. Most of the recipes I found were for "spaghetti sauce" and yours is just plain ol' tomato sauce. Again, my sincere thanks.

I too (like so many others), am so happy to have found your blog!! I've lost weight before on the SBD and like it, but found myself eating the same things over and over and getting bored. Now that I've found your amazing site I don't think that will happen this time! I've been back on the diet a week and have already lost 5 lbs. trying many of your delicious recipes. Two of my favorites were the Asian Lettuce Wraps and Amy's White Chicken Chili ... but I have seen many more I want to try. I have two boys getting married this year and have good motivation to loose weight, but having found your site I hardly feel like I'm on a diet!!

Hello Kalyn, I recently started Southbeach to kick those last "baby" pounds and I am so incredibly thankful for you and your blog! Thank you, a thousand times, for helping me put together my menu every week and for enabling me to lose the 10lbs I've lost in the last 4 weeks!

To show my appreciation... I'm passing along this recipe that a girlfriend recently introduced me to. It is a sauce that I use as a salad dressing and it is so fabulous! I pour it atop a bowl of cooked cold kidney beans, chopped raw broccoli, spinach, cilantro, grated carrot and dollop of sour cream.

1/2 cup oil (I used light olive oil)
1/2 cup almonds
1/3 cup brewers yeast
1/3 cup garbanzo beans - drained
1/4 cup soybeans
1/2 cup water
1/2 cup lemon juice
2 garlic cloves
1/2 tsp salt
1 tsp curry powder

Blend nuts, garlic, beans and oil in food processor. Then blend in yeast and liquids one at a time. Puree until smooth. Voila!
