Recipe for Bacon, Tomato, and Zucchini Salad with Feta

If you're growing a garden that contains zucchini, eventually you reach that "what do I do with all this zucchini" dilemma. I've been known to leave grocery sacks of the stuff on neighbor's doorknobs so they find it when they come home from work. If you have zucchini overtaking your garden, here's a good recipe to help use it up. This is delicious, but only make this if you have fresh summer zucchini and tomatoes. This year I have some fantastic Lemon Boy tomatoes which are bright yellow. This salad would look beautiful with a mixture of yellow and red tomatoes and the green zucchini.


Bacon, Tomato and Zucchini Salad with Feta
(about 6 servings, recipe created by Kalyn)

6-8 medium tomatoes, diced in 1" pieces
(if they're really juicy I dice my tomatoes into a colander
and drain for a few minutes)

4 small zucchini, diced in 1/2" pieces
1/4 cup crumbled feta cheese (optional)

Dressing:
1/4 cup very crisp cooked, diced bacon
1/2 cup mayo (not fat free)
1/2 cup olive oil
1/4 cup white wine vinegar
1 tsp. Splenda
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tsp. Dijon mustard
1/2 tsp. Vege-Sal (or use plain salt)
fresh ground black pepper to taste

Dice tomatoes and zucchini and place in serving bowl. In food processor or blender chop bacon until it is in very small bits. Add mayo, oil, vinegar, Splenda, Dijon and spices and pulse a few times until ingredients are well combined. Pour dressing over salad, sprinkle with feta, and serve.

You won't need all this dressing for the salad. You can use the leftover dressing to make Spinach Salad with Bacon Dressing or Better for You Than Mom's Bacon and Cabbage Salad. The dressing will keep in the refrigerator for at least a week, but you need to bring it to room temperature before using it.



South Beach Suggestions:
The South Beach Diet recommends not eating bacon, due to the large amount of saturated fat. However, the amount of bacon in each serving of this salad is very small, and the bacon adds a lot of flavor. I would feel comfortable eating this for any phase of the diet for a "once in a while treat."
