Product Rave for Trident Panko Breaded Alaskan Cod (with Kalyn's Homemade Tartar Sauce)

I'm a member of "The Church of Costco". That's what National Public Radio called those folks who go to Costco every weekend and are religious in their zeal about the place. I don't buy a lot of frozen convenience foods, since I like to make my own food. But once in a while Costco has a product that really tempts me.

I was tempted for weeks to buy Trident Seafoods Panko Breaded Alaskan Cod, since the carb count was low, and fish and chips was something I had always loved before I started caring about the glycemic index. For some reason I resisted buying this for weeks before I finally succumbed. When I did try it I was very happy with it.

I followed instructions on the package and baked it at 425 degrees for 22 minutes, turning halfway through. (I made the homemade tartar sauce while it baked.) For a frozen foods product, this was first rate. It was as good as I've had in lots of restaurants. Even though this type of food product is something I won't ever eat a lot of, this is a good thing to have on hand for those nights when you just don't want to cook.

For those who care, the recommended serving size of 2 filets of Trident Panko Breaded Alaska Cod has:

10g fat
1.5 g saturated fat
0g trans fat
15mg cholestral
280 mg sodium
18g total carbs (9g fiber, 1g sugar)
11g protein

Some of the filets are small, so two is a small serving, but even if you splurged and had three this would still be quite low fat, low carb, and low sodium for this type of food product. I recommend it highly.

Kalyn's Homemade Tartar Sauce

1 cup mayo (or use half mayo and half light mayo)
1/3 cup dill pickles
2 T capers
1 tsp. onion powder

Put pickles into bowl of food processor and process until finely minced. Add other ingredients and pulse a few times. This will keep in the refrigerator for about a month. It's not a low fat creation, but it sure did taste good on the fish.

    Does your Costco still carry the Trident Panko Breaded Alaskan Cod. I loved it like you, but our Costco stopped carrying it and I wanted to see if it's just ours or a national decision.
