Dear Andrew: Here's What I Made for Breakfast

The talented Andrew who has given me so much help on Food Blog S'cool has invited bloggers to share what they had for breakfast today. Now if you're not a food blogger you may think this is very strange indeed. But for food bloggers, an activity like this is a chance to visit lots of other blogs and see how other writers interpret the same theme. Andrew will post a wrap-up of all the participants on his food blog SpittoonExtra.

During the work week I consistently eat egg muffins for breakfast. I confess, I eat them in the car while I'm driving to work. On Saturday often it gets to be mid-afternoon and I realize I have not eaten a thing. However, on Sunday I love to get up early and cook something for breakfast, and most often it will be an omelet. Today I made an omelet with bacon, feta cheese, and a tiny bit of sharp cheddar. I don't claim to be an expert in omelet making, but it was delish.

I don't eat a lot of bacon so I buy the precooked bacon and keep it in the freezer for special treats like this. Chop up two slices of bacon and crisp it in the omelet pan. Drain the bacon on a paper towel. (Don't wipe out the pan.) Whip up two eggs with a dash of milk and some Spike Seasoning and pour it in the hot pan. Immediately lower heat and cook about 2 minutes, until bottom is barely starting to set. Add crisp bacon and cook 2 minutes more.

While eggs and bacon are cooking, crumble up about 1/4 cup feta cheese (or less if you're not crazy about feta). Add it to omelet, with a tiny bit of sharp cheddar if you want. Cover pan and cook 2-4 minutes more, until cheese is fairly melted.

Using the biggest turner you have, carefully flip one side of omelet over the other. If some cheese and oncooked egg oozes out (which it nearly always does) cook a minute or so more on each side.

Here's my omelet which I ate with some grapefruit and a nice glass of milk. I hardly ever drink milk except with a meal like this, but it did taste good.

(This would definitely be a "once in a while treat" for the South Beach diet if you use bacon.)

  3. I must argue...You ARE an expert omelette maker! At least going by the pictures! Which are lovely as usual. Did you see the Alton Brown show on eggs? He really has that "tip the pan and rolllll it onto the plate" thing down.

    I really like feta omelets. I usually add herbs -- fresh or dired -- to the eggs.
