Recipe for Spinach Salad with Bacon Dressing

This is a recipe I came up with when spinach was on sale. South Beach doesn't encourage eating bacon due to the saturated fat, but the amount of bacon in a serving of this dressing is very small, and it adds a lot of flavor.

Kalyn's Kitchen is my personal blog, where I share recipes I'm cooking in my own kitchen. I'm a fan of the South Beach Diet, and unless otherwise noted, I try to make my recipes suitable for the low-glycemic index way of eating made popular by that diet. This site is not directly affiliated with The South Beach Diet, and any information or suggestions provided here are merely my opinion. If you're interested in Getting Started on the South Beach Diet, I always recommend reading the book first so you understand the science behind this way of eating.

But not everyone who reads this blog is a follower of the South Beach Diet, so in 2013 I gave my blog a makeover, adding Recipe Labels so it's easier to find recipes for many other types of diets.   Just click any of the category labels in the new second row of tabs below, and you can scroll through all the recipes on the site that are suitable for that type of diet.  (Here's more about how the new categories work.)

Cafe Rio Dressing, Chicken and Rice

Since my sister Sandee first took me to Cafe Rio, I've discovered there are imitators springing up all over. They specialize in salads which start with a tortilla, then layer on cooked beans, rice, lettuce, specially seasoned chicken, cheese and a cilantro ranch dressing that is delicious.

Salmon with Tzatziki Sauce

(Edit - in July of 2007 I posted a great recipe for homemade Tzatziki Sauce. You can use that link to find the recipe.)

This isn't really a recipe, but someone asked me to add it to the blog so they could remember the name of the sauce. Tzatziki sauce is a Greek sauce (sometimes called "white sauce" in those fast food yogurt places.) If you've had a gyro, you've probably had a variation of it served on the gyro. The real thing has yogurt, sour cream, thinly chopped cucumbers, garlic and dill. You can make your own Tzatziki, but it's also available to buy pre-made.

Grilled Chicken with Balsamic Vinegar

In May of 2007 I posted an updated version of Grilled Chicken with Balsamic Vinegar with a photo and links to step-by-step instructions for making perfect grilled chicken breasts.   (At that time it wasn't possible to move the post forward without breaking the link.)   I have removed this old post so the recipe doesn't come up twice in search engines, but I am leaving this page here in case anyone has a bookmark for the old recipe.

Cilantro Caesar Chicken Salad

Recently at Costco I purchased El Torito brand Cilantro Pepita Caesar salad dressing (they were demo-ing it, and I'm a sucker for those demos). It has 2 carbs (1 g. sugar) in 2 T, so it's an acceptable choice for the South Beach Diet. I used it to make my own version of Rubios Grilled Chicken Chopped Salad (one of my favorite fast food options). Everything in this dish is great for the south Beach Diet.

Better-for-You than Mom's Bacon and Cabbage Salad

When I was a kid, everyone loved mom's bacon and cabbage salad. Here's how my mom made it:

Fry a pound of bacon until it was very crisp and drain on paper towels.
Cut up a head of green cabbage into thin shreds and place in bowl.
Crumble drained bacon and sprinkle over cabbage.
Pour out some of the bacon grease but leave at least 1/2 cup, then add 1/4 cup apple cider vinegar to the pan, heat the dressing, pour over the cabbage and bacon mixture and serve.This was absolutely yummy, but a little high in saturated fat. Ok, I confess that this was in the 60's and we had never heard of saturated fat in those days.

Here's a new recipe for bacon and cabbage salad that's a lot healthier.
