I live in Utah, where it's practically written into the state constitution that you must go camping at least a few times each year. Of course, the Utah scenery is so beautiful that you want to get out there and see it. Elaborate, creative cooking is fun at home, but when you're camping, most people just want something that's easy to make and tastes good.

Recipe for Bacon, Tomato, and Zucchini Salad with Feta

If you're growing a garden that contains zucchini, eventually you reach that "what do I do with all this zucchini" dilemma. I've been known to leave grocery sacks of the stuff on neighbor's doorknobs so they find it when they come home from work. If you have zucchini overtaking your garden, here's a good recipe to help use it up. This is delicious, but only make this if you have fresh summer zucchini and tomatoes. This year I have some fantastic Lemon Boy tomatoes which are bright yellow. This salad would look beautiful with a mixture of yellow and red tomatoes and the green zucchini.
