Low Carb Pizza with a Whole Wheat Tortilla Crust

(In February of 2009 I discovered a new type of whole grain flatbread that was perfect for pizza crust and posted a new recipe for South Beach Diet Friendly Flatbread Pizza. I would prefer that pizza now over the recipe in this post.)

First I made Tony's Low Carb Pizza. Tony made this in the summer with fresh tomatoes, and I used sun dried tomatoes for my version. It was good, but I wanted more of a pizza sauce. I had recently discovered Muir Glen Organic Tomatoes and they were wonderful, so I bought a can of their pizza sauce.

For my second pizza attempt I toasted the Carb Chopper whole wheat flour tortillas in a hot oven as Tony had recommended. When the "crust" was crispy, I used the food processor to blend 1 can Muir Glen Organic Pizza Sauce, 1 cup sun-dried tomatoes. 1 T dried basil and 1 T dried oregano. I spread this in a thin layer on each tortilla, then topped with cheese and then pepperoni. I baked them at 450 for about 15 minutes, until everything was crispy and slightly browned. This was a delicious treat.

South Beach Suggestions:
This would be a great South Beach Diet phase two lunch with a bowl of Split Pea Soup or Leftover Chicken Chopped Salad with Red Pepper, Olives and Feta. I just ate my pizza with a green salad with cucumbers, feta cheese, and blue cheese dressing.

    I used to make healthy pizzas with toasted wholewheat bread and cheese and onions and tomatoes and some more vegetables and then broil it in the oven for some time. Your kind sounds real! :)

  10. Kalyn, I make a low-carb pizza inspired by your stuffed portobello mushroom recipe. I use the mushroom as the "crust" of the pizza. I add onions, pepperoni (turkey pepperoni is a good low fat option), olives, mozzarella, parmesan, and plenty of oregano and black pepper to give the concoction a "pizza-like" taste. It's really good and actually tastes like a pizza. It's an alternative for diabetics like me who really shouldn't be eating even a whole-wheat crust. (But boy, does it look good!)
