I made this yesterday for St. Patrick's Day and it came out wonderfully. I used two corned beef briskets, one 2 and one 2.5 lbs, that came with their own spice packet, so I just used that. It took a little longer than I expected to cook the veggies, simply because I could barely squeeze them all in my crockpot, but they tasted great and weren't all mushy.
Zoe, so happy to hear it turned out well for you. I like to keep the veggies a bit crisp too, especially the carrots with a little crunch left. I cooked it myself yesterday, and I'm going to eat some today.
