Recipe for Ham Fried Barley

When I was a kid growing up in snow-white Bountiful, Utah, we considered Ham Fried Rice to be the ultimate in Gourmet Chinese Food. In fact we would order it in one breath - hamfriedrice - as if fried rice only came in one flavor, ham being the ingredient that made it fried rice. I guess the memory stuck, because while pondering what to make from the leftover barley I cooked a while back, Ham Fried Barley popped into my head. What a cheesy name for a dish. Still, this tasted great.

This recipe started out as a barley dish that I made for WHB. Barley with Dried and Fresh mushrooms was adapted from a recipe in The Best Recipes in the World by Mark Bittman. Ham fried barley rose from the depths of the fridge a few days later.

Ham Fried Barley
(Makes 3-4 servings, recpe created by Kalyn to use up left-over barley)

1 T olive oil
1/2 onion, diced small
1 cup diced ham
2 cups leftover cooked barley (I used Barley with Dried and Fresh Mushrooms that I had made earlier)
Soy Sauce for serving

Heat heavy frying pan or wok 1-2 minutes, then add oil and heat about 1 minute more. Add onion and saute about 2 minutes, until barely starting to brown.

Add ham and saute 2 minutes, stirring often. Add leftover barley and saute 3-4 minutes, continuing to stir. Serve hot with Soy Sauce.

South Beach Suggestions:
Barley is a great whole-grain food, and this recipe would be great for phase 2 or 3 of the South Beach Diet. Use lean ham for South Beach, with less than 10% fat.
