I really do love to cook, and even enjoy reading cookbooks, something some friends have told me is just plain weird. Since I've been writing this blog it has been brought to my attention that there are many people who don't really like to cook that much, if at all. (Go figure!) In fact, a good friend told me that one of the things she likes most on the blog is when I recommend products that can be purchased ready to eat. That's something I do rarely, since I don't really buy that kind of product very often. But I do sometimes try these things when they are being demo-ed at Costco, and when I do find something that tastes good and is low in carbs, I recommend it. Previously I've recommended Costco products like Del Real Carnitas and Panko Breaded Alaska Cod.
Recently I bought this Rio Sonora Pork in Chile Verde from Costco, and it was really very delicious. Possibly not quite as wonderful as the Chile Verde from The Red Iguana in Salt Lake, my very favorite place to order Chile Verde, but very good. I ate mine with some whole wheat low carb tortillas, and it was a great dinner for something you buy ready to eat. I heated it on the stove, because I think foods taste better that way rather than heated in the microwave, and I sprinkled mine with a little fresh cilantro, but other than that I didn't do anything to it. I would buy it again, and if you're someone who doesn't really like to cook, this is a product you might want to try. (They don't seem to have a web site, so if you don't see it at Costco I don't know where else to look.)By the way, I've been trying for years to duplicate the Chile Verde from The Red Iguana at home, and I've never been that successful. If anyone has a great recipe for Chile Verde, I'd love to hear from you.

Yes, I have friends who think I'm crazy because I love to cook. But, even though I do--it's nice to have access to things like the pork you discovered when I don't want to cook.

Great Blog. I love to cook too. I guess it's because I love to eat good food, and can't find anything as good as mine in a store or restaurant. At least I have someone else to do the dishes, otherwise I probably wouldn't cook so much.

About the Rio Sonora Pork In Chile Verde, I love the stuff, but it is easy to make much better:
Cut up a yellow onion, or more expensive sweet onion, into fairly large pieces (thumbnail size?), and cook in the empty chile pot with a dab of butter on very low heat. Wait a _long_ while stirring occasionally, until they are very soft, way past translucent, and the onions are nice and sweet.
Right near the end of this cooking I add a teaspoon or less of crushed garlic out of a jar, along with one of those tiny 7oz. cans of Embasa Salsa Verde to give the batch more liquid. Stir! A dash of sherry is good too! :-)
Now hack open your bag of Rio Sonora Pork in Chile Verde and shlock it into the pot! Bring the heat up slightly, and heat for at least an hour, stirring occasionally to keep the mix from sticking to the pot bottom.
Just after I take it off the heat to serve I stir in a couple of tablespoons of lime or lemon juice.

Note: The Costco here in Santa Cruz used to carry a 32oz. package, but they discontinued it. A lot of us wrote notes in the suggestion box complaining, and it came back in a 40oz. size at a more than proportionally higher price. :-(
I still bought lots of it, but then they discontinued that one too, and no amount of upset note writing has seemed to have any effect. I hope they keep it available to you! :-)

For a really nice final touch, sprinkle the top of each serving with some roasted pine nuts! Mmmm...

Kalyn , I too loved Rio Sonora Pork in Chili Verde . I purchased it from my local Costco which for the last several months has not been carrying it . Any ideas about where to find it now ?
