I do have to admit that when I first started reading up on anti-oxidant rich foods, I kind of ignored the berries. It's not that I don't like fruit, or that you can't eat fruit on the South Beach diet. The fact that fruit is allowed on the diet is one thing that made me decide to try South Beach in the first place. But fruit does contain lots of carbs compared to veggies, and I'm more likely to choose bread, rice, or even something like lentils for my carbs.
So this recipe is dedicated to my brother Rand, the absolute fruit lover in my family. I remember when Rand lived in Chicago, every time he came to visit my mother would put out a big bowl of fruit on the table for him. Rand, you're going to love this recipe.
The idea of combining berries with vanilla yogurt to make a healthy fruit salad is one I got from a woman named Kaye that I used to work with. Through the years, I tried different combinations, and this is one I have really liked. Blueberries are also great in this, if they're in season when you make it.
I admit, this is so simple it's almost foolish to call it a recipe. No actual cooking is involved, and it's somewhat messy looking. Once again I have concocted something that tasted great, but was hard to get a good photo of. But the flavor of this is so amazing, you must try it. The variations are endless.
Red and Green Fruit Salad
(Makes 4 servings, inspiration for the idea was from Kaye)
6 oz. raspberries
2 kiwi, peeled and cut in 1/2 inch pieces
1 cup green grapes, cut in half lengthwise
6 oz vanilla yogurt (I use Kroger Carb Master yogurt, use sugar-free yogurt for the South Beach Diet)
Combine ingredients, being careful not to over mix, although some breaking apart of the raspberries will improve the flavor. Chill if desired. This will keep in the refrigerator for a day or two.
Other fruits you can use include blueberries, blackberries, plums, or red grapes.
Using low carb yogurt will make this a suitable dish for the South Beach Diet, phase two or three. I really like Kroger brand Carb master Yogurt, which has only 4 carbs and 1 1/2 grams fat in six ounces, but there are other good low carb yogurts available if you can't find the Kroger brand.
