People keep telling me to post more "easy" recipes for South Beach Dieters, so here's a super easy idea for something delicious to eat for lunch in the summer. Of course, when you have tomatoes and cucumbers in your garden, this is even better, but even with store cucumbers and tomatoes, this is pretty darn good.
Easy Summer Lunch Salad
(adjust amounts for the number of servings you need)
-ripe tomatoes, cut in chunks
-cucumbers, peeled in stripes, then cut half lengthwise and sliced
-blue cheese salad dressing, about 2 T per serving
-crumbled feta cheese, about 2 T per serving
-salt, fresh ground black pepper
Combine cucumbers and tomatoes with blue cheese dressing. Crumble feta over, then season with salt and pepper to taste. Enjoy!
