People keep telling me to post more "easy" recipes for South Beach Dieters, so here's a super easy idea for something delicious to eat for lunch in the summer. Of course, when you have tomatoes and cucumbers in your garden, this is even better, but even with store cucumbers and tomatoes, this is pretty darn good.Easy Summer Lunch Salad
(adjust amounts for the number of servings you need)
-ripe tomatoes, cut in chunks
-cucumbers, peeled in stripes, then cut half lengthwise and sliced
-blue cheese salad dressing, about 2 T per serving
-crumbled feta cheese, about 2 T per serving
-salt, fresh ground black pepper
Combine cucumbers and tomatoes with blue cheese dressing. Crumble feta over, then season with salt and pepper to taste. Enjoy!

I can't even tell you how wonderful that looks - plus I am trying to use the SB diet (kinda) so that totally works for me!~

Anonymous, actually it can be. I made this dressing from a mix where you add buttermilk and low-fat mayo. Unfortunately I haven't been able to find it lately, but it was very South Beach Diet friendly at the time I posted this.
uh.....why are you ruining a greek country salad with gloppy dressing? Just put some extra virgin olive oil and salt on it....sheesh....
Anonymous, here is a news flash for you: people have different food preferences. I like blue cheese dressing on this salad. Obviously you don't, so I suggest you make your own salad however you like it and I will too. Sheesh.
I like this! Will try soon. BTW I agre, I like the idea of trying with blue cheese dressing. I like new tastes and not so traditional all the time.
My husband is Turkish, and this dish is so common over in Turkey, that he doesn't even see it as "diet" food! Yay!
