South Beach Recipes of the Week #2

Since I've been eating the lower glycemic way I've often had people say to me, "But what do you eat?" Because most people don't know much about the glycemic index, which is what the South Beach Diet is based on, I've decided that once a week I'll spotlight South Beach friendly recipes I see on other food blogs. I know only some of my blog readers are South Beach fans, and rest assured, my goal is not to convert anyone to the South Beach diet. I'm pro-choice when it comes to eating! However, I'd be willing to bet plenty of non-South Beach eaters will think these recipes look good too.

I've shared lots of recipes for egg muffins with you on this site, but now I can tell I need to get some mini-muffin tins so I can make these Mini Frittatas with Cheese created by Gabriella from My Life as a Reluctant Housewife. With broccoli, bacon, tomatoes, and mozarella cheese, I think these sound just fantastic.

This recipe for Spicy Chicken Cakes with Horseradish Aioli caught my eye on Culinary in the Desert. With only three ounces of whole wheat bread crumbs to 16 ounces of chicken, these are a good choice for South Beach, and they look yummy. (Be careful to choose bread that is 100% whole wheat to make the breadcrumbs. It can be hard to find.)

Ruth from Once Upon a Feast is also a South Beach Dieter, and she's learned that one delicious way to eat plenty of South Beach approved veggies is to marinate and then grill them. Check out Ruth's recipe for Grilled Marinated Vegetables, then look around her site and you might see some other good South Beach recipes too.

Great cook and photographer Haalo from Cook (almost) Anything At Least Once had a post with two recipes that looked great for South Beach eaters. Pictured above is her Chermoula Chicken Skewers, and when you go to get the recipe you'll also see some yummy looking Skewered Lemongrass Prawns.
