Easy South Beach Recipes: Friday Night Salmon Two Ways

Back in September of 2005 I published this recipe for Friday Night Salmon, so called because it's easy enough to cook after work on Friday but delicious enough to celebrate the end of the week. It languished in my recipe archives, getting only two comments in all that time, and desperately needing a photo. Now that I've promised to post easy South Beach recipes every once in a while, this recipe is perfect to show you how something that's ridiculously easy to make and only has a few ingredients can still be show stopper delicious. Salmon cooked this way is so good, it tastes like something you'd get in a fine restaurant.

You can cook this on a cast iron grill pan with ridges if you don't have a gas or charcoal barbecue grill and it will taste just as good. What you must be sure to do is to rub the salmon with olive oil then sprinkle on your favorite fish rub and let it come to room temperature for 15 minutes or so before you grill it. Use that method and it will taste delicious.

I often buy the frozen salmon from Costco to make this, and they recently started carrying frozen wild salmon which is even better. My favorite fish rub is made by Pride of Szeged.  Another rub that I think would taste good with this is Trader Joe's Seafood Grill and Broil seasoning. A blog reader also recommended Williams Sonoma Potlatch Salmon and Seafood Spice Rub which I'm going to look for next time I go there.

Less is more Friday Night Grilled Salmon

salmon filets, one per person
1 T extra virgin olive oil per piece of salmon
1 tsp. Pride of Szeged Fish Rub per piece of salmon

Spray grill with nonstick spray and preheat to high heat (you can only hold your hand there for a few seconds). While grill heats, rub salmon with olive oil and sprinkle generously with fish rub. Let fish come to room temperature, at least 15 minutes before grilling.

Grill salmon about 5 minutes per side, or until firm to the touch. To get those fantastic grill marks, rotate a quarter turn after the first 3 minutes on each side.

Lemon Herb and More Friday Night Grilled Salmon

salmon filets, one per person
2 T Cardini's Lemon Herb Salad Dressing per salmon filet
1 tsp. Pride of Szeged Fish Rub per salmon filet

Spray grill with nonstick spray and preheat to high heat (you can only hold your hand there for a few seconds). In small dish, mix salad dressing and fish rub. Brush generously on both sides of salmon and let sit while grill is heating, or longer, up to 30 minutes.

Grill salmon about 5 minutes per side, or until firm to the touch. To get those fantastic grill marks, rotate a quarter turn after the first 3 minutes on each side.

South Beach Suggestions:
Salmon cooked this way is perfect for any phase of the South Beach Diet. In the photo above, it's served with crisp romaine lettuce and cucumbers tossed with blue cheese dressing. You could also serve it with Wake Up Your Mouth Thai Cucumber Salad or Kalyn's Low Carb Coleslaw for phase one. For phase two or three, add something like Kalyn's Tabbouli with Almonds.

    Christine, the orange background is a piece of fabric. My brother bought me something called "Photo Studio in a Box". It's a type of light box and you can change the background color. I'm going to post about it because I think a lot of food bloggers would love it.
