Easy South Beach Recipes
Spicy Avocado in Pita

I've promised to start sharing super easy recipes once in a while that are tasty and South Beach Diet friendly, and this is one of my favorite things to eat for lunch whenever avocados are on sale at the market. It's nothing more complicated than avocado mashed with a fork, spiced up with a bit of chile powder and salt, and then eaten in a 100% whole wheat pita pocket with a bit of lettuce. In fact, the hardest part of the recipe might be finding the 100% whole wheat pita pockets. I'm very partial to Kangaroo Brand 100% Whole Wheat Salad Pockets if you can find them. If you visit that link they have a store locater, but the two stores where I shop most only seem to have them once in a while.

If you do manage to find the 100% whole wheat salad pockets, they're also great to cut into triangles, crisp in the oven a little, and use instead of chips for any kind of dip. I like them with hummus also, for another South Beach Diet approved snack. And if you don't care about dieting at all, they're just downright tasty too!

Spicy Avocado in Pita
(2 servings, Kalyn created this for lunch one day)

Ingredients:
1 very ripe avocado
2 100% whole wheat pita pockets (Kangaroo brand preferred)
(2 pita pockets would be one piece of pita bread if you can't find the pockets)
1/4 tsp. spicy chile powder (or more, I used Penzeys ground Chipotle, but any spicy chile powder would work here)
Vege-sal (or use plain salt, but the Vege-sal adds a lot of flavor)
Lettuce

Instructions:
Remove peel and seed from avocado and mash thoroughly with a fork. Season avocado with chile powder and Vege-sal or salt, and stir until it is quite creamy looking. Spread 1/2 avocado mixture inside each pita pocket, tuck in a bit of lettuce, and serve.


South Beach Suggestions:
One thing I love about the South Beach Diet is the concept of *good fats* whereby something like avocado becomes a treat you can enjoy. One of these pita pockets with avocado would make a great lunch for me. If you wanted more, add a lowfat choice like Wake Up Your Mouth Thai Cucumber Salad.

I love avocados! I just made quesadillas with avocados, cheese and jalapeno peppers. The best. And yes, woohoo, I'm preggers, 13 weeks now, that is why I was so quiet for awhile--off napping!

Looks GREAT! BTW when I crisp up pitas, I also mist VERY lightly with olive oil, then sprinkle on pimenton or Italian seasoning or whatever sounds good from the spice shelves! They're wondrous ...

Yes, it's easy. But, the best thing is that it would taste so good!!! I love avocado sandwiches.

Alanna, I like the idea of misting and seasoning the pitas. Haven't tried that.

Sher, we could put some avocado on our bacon and tomato sandwiches, what do you say?

Joe, it's a mystery to me why they're so hard to find. I keep bugging the people at both of the stores where I shop, so maybe that will help.
