Easy Recipe for Spicy Avocado in Pita

Spicy Avocado in Pita
One of my favorite options for a quick healthy lunch is this Spicy Avocado in Pita.

(Updated May 2013 with better photos and step-by-step instructions.  I've been making this Spicy Avocado in Pita regularly since I first posted it in 2006!)  If you're going to stick with any kind of healthy eating plan you need some easy and healthy options for times when you just don't want to cook, and this is one of my favorite things to make for an easy lunch or dinner, especially whenever avocados are on sale. It's nothing more complicated than avocado mashed with a fork, spiced up with a bit of chile powder and salt, and then eaten in a 100% whole wheat pita pocket or Foldit with a bit of lettuce.  (The same whole wheat pita I use for this is also great to cut into triangles, crisp in the oven a little, and use instead of chips for any kind of dip or hummus, for another easy and healthy snack or lunch.)

I used to make this with Kangaroo Brand 100% Whole Wheat Salad Pockets, but lately I've been using these Flatout 5 Grain Flax Foldits, which have 7 grams of fiber and only 90 calories.  (If you're making this for the South Beach Diet, be sure you choose this one and not one of the white-flour Foldits, or any type of whole wheat or whole grain pita will work.)

Mash up the avocado with the spicy chile powder and salt.  (I love Vege-Sal for avocado.)

Spread half the avocado on each Fold-It or inside the pita pocket.

Top with shredded lettuce, fold over and eat!

(Makes 2 servings, Kalyn created this for lunch one day in 2006, and she's been making it ever since!)

1 very ripe avocado
1/4 tsp. spicy chile powder (or more, I used Penzeys ground Chipotle, but any spicy chile powder would work here)Vege-sal (or use plain salt, but the Vege-sal adds a lot of flavor)
2 100% whole wheat pita pockets (Kangaroo brand Whole Wheat Pockets or Flatout 5 Grain Flax Foldits preferred)
(2 pita pockets would be one piece of pita bread if you can't find the pockets)

Remove peel and seed from avocado and mash thoroughly with a fork. Season avocado with chile powder and Vege-sal or salt, and stir until it is quite creamy looking. Spread 1/2 avocado mixture inside each pita pocket, top with a generous amount of shredded lettuce, and eat.

South Beach Suggestions:
One thing I love about the South Beach Diet is the concept of *good fats* whereby something like avocado becomes a treat you can enjoy. One of these pita pockets with avocado would make a great lunch for me. If you wanted a more substantial lunch, add a lowfat choice like Wake Up Your Mouth Thai Cucumber Salad.

Nutritional Information?
I chose the South Beach Diet to manage my weight partly so I wouldn't have to count calories, carbs, points, or fat grams, but if you want nutritional information for a recipe, I recommend entering the recipe into Calorie Count, which will calculate it for you.
