South Beach Recipes of the Week #6

On Saturdays, I spotlight South Beach Friendly recipes I find on other food blogs. I like doing this since a lot of people don't know much about the glycemic index, which is what the South Beach Diet is based on. Every week I find so many good recipes that would work for South Beach eaters that it's hard to choose just four. Now, I realize that only some of my blog readers are South Beach fans, and rest assured, my goal is not to convert anyone to the South Beach diet. I'm pro-choice when it comes to eating! However, I'd be willing to bet plenty of non-South Beach eaters will think these recipes look good too.

Since I wrote about purslane for Weekend Herb Blogging this week, I thought it would be fun to show you another salad featuring this interesting type of greens, delicious looking and South Beach approved. Catherine of Albion Cooks created this Grilled Zucchini Salad with Purslane and Tomatoes. She actually bought her purslane, which looks a bit more tender than the weeds I found.

The next South Beach Friendly recipe I found came from Glenna at A Fridge Full of Food, a blog you should check out if you haven't seen it. She created Cascadilla or chilled vegetable soup which is chock full of veggies, v-8 juice, lowfat yogurt, and lowfat sour cream.

Next, a great South Beach approved recipe when you need something to snack on. Fiber of 28 Cooks featured Fusion Black Bean Dip with lots of complex flavors. For South Beach, I'd eat this on toasted 100% whole wheat pita bread, 100% whole wheat flour tortillas, or veggies.

Last, from my great friend Alanna at A Veggie Venture, beautiful Refrigerator Pickles, something that sounds perfect with the kind of grilled meat dinners I love in the summer. This recipe does have some sugar which could easily be replaced with Splenda, or use half sugar, half splenda if you want to have the best of both worlds. The same post also has marinated brussels sprouts, which also sound like a great summer side dish.

  2. Gee, all of these look good. I'd take your suggestion on the pita with that dip, but just because I am a huge pita fan, not because I'm on SoBe.
