South Beach Recipes of the Week #7

Saturday again, and time to spotlight South Beach Diet friendly recipes I find on other food blogs. It's fun doing this because a lot of people don't know much about the glycemic index, which is what the South Beach Diet is based on. Now, I realize that only some of my blog readers are South Beach fans, and rest assured, my goal is not to convert anyone to the diet. I'm pro-choice when it comes to eating! However, I'd be willing to bet plenty of non-South Beach eaters will think these recipes look good too.

This recipe from Bron Marshall and the blog of the same name, looks just like the kind of thing I love to eat during the summer. Green Bean, Goat Cheese and Kalamata Salad is simply blanched green beans and kalamata olives, lightly dressed with olive oil and fresh lemon juice, then sprinkled with feta or goat cheese. Perfect in every way!

I loved the sound of everything in this recipe of Green Tea Salmon created by Michelle of Je Mange la Ville, a blog that always has great looking food. Michelle even served it with South Beach Diet approved Green Coconut Brown Rice, which I thought sounded like a great combination.

If you're a South Beach Dieter imagine some low-glycemic rice instead of potatoes served with this delicious looking Chicken with Creamy Mustard Sauce with Dill and Crisp Bacon, and this could be a wonderful South Beach Diet meal. This recipes comes from Pille of Nami Nami, who cooks yummy looking food in Scotland. Bacon isn't really encouraged on South Beach, but there's only the tiniest amount of actual bacon in each serving, and it would be easy enough to switch the cream for half and half in this recipe.

When it comes to eating, Sher from What Did You Eat? seems to have many of the same food preferences as I do, at least all her food looks so good to me. This simple stir-fry dish of Chicken and Eggplant in Black Bean Sauce really caught my eye. The recipe has two tablespoons of honey, which I might switch for Splenda, or half honey/half Splenda, but otherwise, this is perfect for South Beach Dieters.
