Super Easy Grilled Mushrooms Recipe (Low-Carb, Gluten-Free, Paleo)

(For Phase One Fridays I highlight Phase One recipes from the past that have been my personal favorites, and these Super Easy Grilled Mushrooms would be perfect to accompany most anything you're cooking on the grill this weekend!)

This is one of those recipes that's so ridiculously easy to make, so delicious, and so healthy, that you'll wonder why you shouldn't make it at least once a week. A recipe couldn't get much easier than this one with only two ingredients. It does help a lot to have a pan like the one below, which looks like a small wok with holes and sits on the top of the grill. If you don't have one of these pans, you might be able to cook this right on the grill if your grill slats are not too wide.  If you're still looking for a Father's Day gift, a grill pan like this one might be a perfect idea!

This pan is about 11 inches across, which is big enough to cook food for 3-4 people. If you have a choice, I greatly prefer the type of pan that doesn't have a long handle, since those stick out and keep the grill lid open.  (I got the one in the photo at T.J. Cooking the mushrooms on the grill couldn't be easier. Cooking time will depend on how hot your grill is, but 10-15 minutes is about how long it takes. I prefer to have the mushrooms still a little firm, but well browned, which is best done with high heat.

Super Easy Grilled Mushrooms
(Makes 2-3 servings)

1 pound large mushrooms
1/4 cup Italian salad dressing, not low fat or fat free  (I used Newman's Own Original Recipe Olive Oil and Vinegar Dressing. For South Beach Diet be sure to choose a dressing with not more than 2 grams of sugar per serving.)

Despite all the cookbooks saying not to wash mushrooms, I've done it for years. Either wash mushrooms by rinsing with cold water and then drying with paper towels (my method) or wipe clean. Cut in thick slices, about 1/2 inch wide. Put in large ziploc bag or plastic container with snap-on lid and pour dressing in. If you have time, marinate for an hour or two, although it's not essential.

To cook, preheat grill to medium high with the grill pan sitting on the grill while it heats. Drain dressing from mushrooms and pour them into grill pan. (The dressing will flame up a little; I squirt it out with a spray bottle if it flames too much.) Cook 10-15 minutes, turning occasionally, or until well browned but still a little bit firm. Serve hot.

South Beach/LowCarb Suggestions:
This recipe is a perfect side dish for any phase of the South Beach Diet, especially if you're cooking something else on the grill like Grilled Chicken Sanpete Kabobs or Grilled Mahi Mahi with Lemon and Capers.  This recipe is very low in carbs, and with approved dressing it would also be Paleo.

I chose the South Beach Diet to manage my weight partly so I wouldn't have to count calories, carbs, points, or fat grams, but if you want nutritional information for a recipe, I recommend entering the recipe into Calorie Count, which will calculate it for you.

  1. I've had these mushrooms many times, you need PILES of mushrooms because they're so good! We take a slightly different tack, cooking in foil packets, also reduced fat Italian dressing with complete satisfaction (trapping the mushroom moisture in foil might make the low-fat work fine).

  7. Well, I used to wash my mushrooms. Does that count? Now I use a brush that says "mushrooms" on it. A tool for every need...
    I'm going to make this dish for a potluck party we're giving this weekend. I'd been wondering what one of my offerings would be, and this is it. Thanks for the inspiration and thanks to Alana for the cooking in foil tip. Our gas grill is not dressing friendly and my husband throws water on any flare-ups! On a gas grill? Jeez!!!

  8. I never wash, especially when I'm going to toss the mushrooms on the grill. I figure the dirt will burn off - or it will enrich the marinade! I'm a wiper. And I love love love grilled mushrooms.

  9. I usually just brush any larger chunks of dirt off mushrooms with a damp towel. Other than that they don't need much cleaning, especially if they're young enough to still be unopened.

    I like this method of grilling smaller mushrooms. I think I'll try it next time I bust out my grill. Thanks K!

  10. This looks so good. I LOVE mushrooms but have no grill, so I usually end up sauteing them. However, next time someone grills hamburgers, which for some reason I'm not too fond of, I may have a portabella grilled. MMMMm!

  11. I washed and dried 'em. I've just brushed 'em. I have yet to discern any difference in texture. A damp towel would be a great compromise.

    Love the reference to TJ Maxx - my favorite place for kitchen stuff.

  12. That isnt dirt on white mushrooms, (the kind from the market) its bat guano. Sterilized, but still. You should wash.Or at least brush vigorously.

    And I think that is a chestnut roasting pan! So Cute!
