I'm dividing the salads into main dish salads (often containing beans, chicken, eggs, meat, seafood or cheese) and side dish salads, but the side dish salads could be eaten as a full-meal serving.

Recipe for Stuffed Peppers with Cabbage

Stuffed Peppers with Cabbage
Not the best photos I've taken, but this is a delicious recipe!

My local store had red peppers on sale for $1.00 each, and I hadn't had stuffed peppers for a while, so I decided to experiment. I did a couple of things that were new for me. First, I (gasp) did not pre-cook the peppers. That meant they were cooked by roasting, which I thought gave a great flavor and kept them a bit more tender-crisp than normal stuffed peppers. Second, I put a good bit of finely diced cabbage in the stuffing to notch up the nutrition a bit, since cabbage is one of The World's Healthiest Foods, at least according to the list by the George Mateljan Foundation. I added brown rice and cremini mushrooms to the stuffing for even more nutrition. The long baking time to get the peppers roasted caused the Italian Sausage flavor to go all through the stuffing. These were quite simply the best stuffed peppers I've ever made.

Weekend Herb Blogging #17 Recap:

Once again it's the weekend and time to Recap herb bloggers posting about herbs, plants, veggies and flowers. A few minutes ago I suddenly had a sign from the universe: after nearly two hours spent typing, the entire recap suddenly disappeared from my computer, never to be seen again. "Shorter!", the universe said to me. "Shorter is better." So this may be the first of shorter recaps every week. Seems like an idea whose time has come.

Fresh Artichokes and Recipe for Mom's Dipping Sauce for Artichokes

I grew up in a family where most of us considered fresh artichokes to be a delicacy, thanks to a wonderful mom who cooked them, even though we had a family of ten kids to feed. It wasn't until I was well on the way to adulthood that I realized that some people didn't eat artichokes, and had no idea how to cook them. The artichoke is interesting in that when you eat them fresh, you have more left than you started with, or so it seems! Only the stem, heart (base where the leaves grow), and the very inner tips of the leaves are edible, but those parts are delicious. Online I was able to find an abundance of artichoke information, including the fact that Marilyn Monroe was once crowned artichoke queen. In the U.S. lots of artichokes come from California. A good source of vitamin C, folate, dietary fiber and minerals, artichokes are quite nutritious. Of course all vegetables are best fresh, but canned artichokes can be very good in things like breakfast casserole or frittata. Today artichokes are still one of my very favorite foods, and very low in carbs too!

Lentil, Rice, and Sausage Soup from Leftovers and More Phase One Success Stories.

This recipe is one of my "Second Helpings" where I show how you can make a second dish from a recipe I've previously featured on Kalyn's Kitchen. I started with the Lentil, Rice, and Sausage Casserole that I featured as part of a Weekend Herb Blogging post on lentils. It was tasty, and I froze the leftovers. Recently it was kind of a dreary day in Salt Lake and I was going out shopping, so I used my Crockpot to turn the casserole into a delicious soup. I ate it topped with freshly grated Parmesan cheese for a great dinner when I returned home.

Weekend Herb Blogging was started as a joke when I didn't have a cat or a dog to participate in Weekend Cat Blogging or Weekend Dog Blogging. Now the event has expanded to include people all around the world who share about interesting herbs, plants, veggies or flowers. There's a new icon which comes in two sizes for participants to use as they wish, designed by Rand. I've realized that people should be able to do herb blogging any time, and only the Recap needs to happen on the weekend. The possibilities are limitless! A Cold Remedy That Really Works!

COLD REMEDIES MEME
I was tagged for this meme by the lovely Paz from The Cooking Adventures of Chef Paz. I'm sorry if my entry for the meme sounds more like an ad for Zicam than a post about home remedies for the common cold. But the truth is, even since I discovered this product, I've never used anything besides Zicam when I get a cold. Since I'm spending every work day, Monday through Friday, with a room full of 26 little germ carriers, I get exposed to a lot of cold germs. Zicam is a homeopathic remedy for colds which is sold over the counter in the U.S. It contains zinc, also an ingredient in other cold remedies. The makers claim if you use Zicam at the first sign of a cold symptom, it "actually shorters the duration and severity of the cold". I tend to be skeptical about advertising, but in this case that's exactly what it did for me. I've tried all the versions, nasal mist, swabs, and cold lozenges, and they all work.

Recipe for Alice Springs Chicken Casserole

This is another recipe from the past, back before I had a digital camera to photograph the food. Now that I have a camera, I see it's hard to get a good photo of a creamy, cheesy dish like this, but it's delicious! This is a rich dish, probably not officially approved by the South Beach Diet, but I did use Canadian Bacon which is lower in fat and it's certainly low in carbs. I think it's good to have something decadent tasting once in a while when you're dieting, and I would eat this sometimes for a treat.

I'm starting out this post with a couple of public service announcements. First, to your left is the great new Weekend Herb Blogging logo created by my ultra-talented brother, Rand. Weekend Herb Blogging #15: Anasazi Beans and a History Lesson

This week's Weekend Herb Blogging is combining a little history lesson with some foodie talk. Recently in my fourth grade classroom we had a Native American Feast to finish up 6 weeks of learning about the early inhabitants of Utah. For the feast I cooked Anasazi Beans, and they were a huge hit with the kids. Anasazi Beans are a variety of beans that were found among the ruins of an Anasazi cliff-dwelling somewhere in the four corners region of the U.S. and then the beans were germinated and re-introduced. Although the beans have other names, in Utah they are called Anasazi Beans after the Anasazi peoples who lived in Southern Utah and Arizona about 130 A.D. The name Anasazi means "ancient ones" and Anasazi people are probably most well known for their amazing rock art, also called pictographs (painted rock art) and petroglyphs (carved rock art) found all over Southern Utah.

Recipe for Leftover Chicken Asian Chopped Salad


Recently I made this wonderful Greek Lemon Chicken. The chicken made a tasty meal with Slow Roasted Asparagus and Mary's Perfect Salad. There was quite a bit of chicken left over and I wanted to make something with it that was healthy, since I'm featuring phase one recipes for the first two weeks of January for all the new South Beach dieters out there. I had some interesting veggies in the refrigerator, which was one of the things that led me to this particular combination. This salad was something I would definitely make again, and next time I might add a little grated ginger root to the dressing.

Greek Food at Cafe Med

Salt Lake City has an abundance of very good restaurants. Even for a picky eater like me, who is extremely biased against franchised chain restaurants, there are lots of great food options. In the midst of all these options for dining out, there's one place I find myself returning to time and time again. Cafe Med is a small, unpretentious restaurant that serves Mediterranean and Middle Eastern food. They have a whole section of Persian favorites on the menu, featuring foods such Kubideh (highly seasoned ground meat kabobs), Kooftah (plum stuffed Persian meatballs), and Persian Spinach and Red Lentil Soup. They have Middle Eastern specialties such as Falafel, Hummus, and Baba Ghanooj. They have plain old American food, which actually looks quite delicious, although the chances of me ordering it are probably quite slim. In spite of this multitude of tasty cuisines, when I visit Cafe Med, I nearly always order Greek food.

Recipe for Curried Cashew Chicken Salad with Quinoa and Baby Peas for Paper Chef

Paper Chef is a blog competition modeled after The Food Network's Iron Chef. Every month, paper chef founder Owen from Tomatilla picks three ingredients from a constantly evolving list, and the previous month's winner gets to choose the fourth ingredient. This month the three ingredients were quinoa, cashews and yogurt, and then the great team of Mrs. Deedop and Chopper Dave from Belly-Timber added the fourth ingredient: anything with the word *baby* in the title.

Fighting Off That Snack Attack with Lower-Carb Snacks

Let's talk a little about low carb snacks. If you're changing to a lower carb eating plan, you need to anticipate the times when you'll want to eat things that are not allowed. Most people can stick with the diet when they're planning a meal, especially if they're following a plan that gives sample menus. It's when you come home from work, starving, and there nothing but cookies in the cupboard that sticking with the diet is a challenge.

Recipe for Chicken With Kalamata Olives

I'm having fun finding recipes in my archives (from before I entered the digital camera age) and making them again so I can update the recipe with a photo. I promised yesterday that I'd share something you could eat for phase one if you're starting a lower carb diet, and this dish is one where the sum is greater than the parts; it's really delicious. The recipe was something I made with bone-in, skinless chicken thighs the first time. Since then I've discovered the boneless, skinless chicken thighs sold in big packs at Costco, so this time I made it with those. Both were good, but if you use the boneless thighs, be careful to keep enough liquid in the pan when you are cooking this. Whichever you choose, chicken thighs need a fair bit of trimming, especially on the underneath side, where there are tendons, bits of fat, and bloody pieces that need to be trimmed away.

I will get to herb blogging in a minute, but first I have some very exciting news to share. Earlier today I got an e-mail from one of our regular herb bloggers, Squeezeweasel, from Gastronomy Domine. She noticed that someone had come to her blog from something called Best of Blogs, and when she checked, she found that Gastronomy Domine and Kalyn's Kitchen had both made the list of ten finalists for Best of Blog Awards - Best Cooking/Recipe Blog. Well needless to say, we are very excited! Flattered too, with some of the great blogs in the list of finalists. Voting starts on Tuesday, so when it does I'll let you know where to go in case you want to vote for one of us. (And don't you think it's pretty darn cool that out of ten finalists, two of them are herb bloggers.)

20 Things That Are Always in My Fridge

When I first started my blog, I did a post where I listed 20 things that are always in my fridge. This was during the time I was still actively dieting (as opposed to what I am doing now: passively eating delicious low carb food.) I was motivated to write the piece by people who kept asking me, "Just what DO you eat?" When I started thinking about writing a month's worth of posts around the topic Who Knew Low Carb Could Taste So Good, I decided to revisit that list. I find it's still pretty current. The one thing on the original list that I rarely buy now now is sugar-free Jello. When I was first eating the lower carb way, I enjoyed this as something that tasted sweet but had very few carbs. Now I would be more likely to eat an apple if I wanted something sweet. Still, some of the sugar free Jello flavors are pretty good.

Recipe for Stir-Fried Bok Choy with Hoisin Sauce

I already shared my list of New Year's Resolutions, but one thing I didn't make a resolution about, but could have, is my desire to try more new vegetable recipes in the coming year. I'm so in awe of how my good blog friend Alanna tries a new vegetable recipe every day, and I know that eating lots of interesting veggies is a great way to avoid boredom when you're eating the lower carb way. Plus most veggies are amazingly low in carbs; for example the bok choy used in this recipe has only 3 carbs per cup.

Happy New Herbs from Around the World

It's Monday afternoon, and delightfully there is no school today, thanks to the new U.S. government policy of declaring that when a holiday falls on Sunday, the following Monday will be a federal holiday. The feds so declared, and my school district decided, finally a federal policy we can agree with! Of course, true to form, the feds do not fund us for the days when we have no school, so it just extends our calendar another day. But still, it's nice to have an unexpected day off.
