I don’t remember where I originally found the idea for this Cucumber Salad with Parsley and Feta, but it ended up being a flavor combination I loved, and this summer when I had lots of parsley in the garden I decided to update the photos.

I grew up with a mom who used to nibble the parsley off everyone’s plates when we went out to dinner, and as a kid I couldn’t imagine why she’d want to eat it. But now I am a parsley lover!

And I think parsley is kind of an under-appreciated herb, so I love growing it and making a salad like this that uses plenty of parsley.  And simple fresh-tasting cucumber salads like this make a perfect warm-weather lunch, or serve this as a side dish for grilled meat.

  • garden cucumbers or European cucumbers
  • red onion
  • chopped parsley
  • crumbled Feta Cheese
  • extra-virgin Olive Oil (affiliate link)
  • fresh-squeezed lemon juice, I used my fresh-frozen lemon juice
  • Dried Oregano (affiliate link)
  • Spike Seasoning (affiliate link), or other all-purpose seasoning blend
  • fresh ground black pepper to taste

What cucumbers would I use for the Cucumber Parsley Salad?

This salad is a great way to use cucumbers from the garden, but when I don’t have garden cucumbers, I use mild European cucumbers.

What if you don’t like raw onion?

If you’re not sure about raw red onion, soak the onion in cold water for a few minutes to remove some of the bite. Or make the cucumber parsley salad without onion if you prefer!

What parsley did I use for the Cucumber Parsley Salad?

I used flat Italian Parsley from the garden for this, but I’m also a fan of curly parsley which is inexpensive and available all year at any grocery store.

What other ingredients could be added to this salad?

This recipe could be varied in endless ways, with tomatoes, avocado, olives, capers, peperoncini, mint, cilantro, basil, and balsamic vinegar being a few things that come to mind as possible substitutions or additions.

How to make Cucumber Salad with Parsley and Feta:

  1. Whisk together ingredients to make the dressing.
  2. Chop red onion into small pieces. (Soak onion in ice-cold water for a few minutes and then drain well for milder onion flavor.)
  3. I left a strip of green when I peeled the cucumbers. If cucumbers have large seeds, scrape out with a spoon before you chop the cucumbers.
  4. I cut the cucumbers into fourths lengthwise, and then chopped into smallish pieces.
  5. Wash flat Italian parsley and spin dry or pat dry with paper towels if needed. Then coarsely chop parsley.
  6. Crumble the feta, and I think more Feta is always good!
  7. In large bowl, combine cucumbers, onions, and parsley.
  8. Stir the dressing into vegetable mixture.
  9. Toss in the Feta Cheese and gently combine.
  10. Season the salad with fresh ground black pepper, and serve.

Cucumber Salad with Parsley and Feta

This simple Cucumber Salad with Parsley and Feta would be great for a summer side-dish.

Ingredients

  • 3 European cucumbers (or use 4-5 garden cucumbers)
  • half of a small red onion
  • 1 cup chopped parsley
  • 3/4 cup crumbled Feta Cheese (or more)
  • 1/4 cup olive oil
  • 3 T fresh-squeezed lemon juice (more or less to taste)
  • 1/2 tsp. dried oregano
  • 1/2 tsp. Spike Seasoning, or other all-purpose seasoning blend
  • fresh ground black pepper to taste

Instructions

  1. Whisk together olive oil, lemon juice, oregano, and Spike Seasoning to make the dressing. If you're not a big lemon fan, use 2 T lemon juice and taste to see if you want more lemon.
  2. I chopped the red onion into quite small pieces. I love raw red onion, but you can soak the onion in cold water for a few minutes and then drain it well if you want less bite to the onion.
  3. I left a strip of green showing when I peeled the cucumbers. If your cucumbers have large seeds, scrape them out with a spoon before you chop the cucumbers.
  4. I cut the partly-peeled cucumbers into fourths lengthwise, and then chopped them into smallish pieces.
  5. Wash flat Italian parsley and spin dry or pat dry with paper towels if needed. Then coarsely chop parsley.
  6. Crumble the feta, and I think more Feta is always good!
  7. In large bowl, combine cucumbers, onions, and parsley.
  8. Stir the dressing into vegetable mixture.
  9. Toss in the Feta Cheese and gently combine.
  10. Season the salad with fresh ground black pepper, and serve.
  11. This will keep in the fridge overnight, but I like it best when it's freshly made so I would probably cut the recipe in half if you won't eat this many servings.

Notes

You can also use small Persian cucumbers, or use a similar amount of fresh garden cucumbers.
