Recipe Favorites: Spicy Cherry Tomato Sauce for Pasta

One of the interesting things about writing a food blog is the need to keep creating new recipes all the time. I'm guessing regular cooks are much more likely to have favorite recipes they make over and over. I never post recipes unless I like how they turn out and think others will enjoy them, but still some recipes certainly fall into the category of *favorites* much more than others. I've decided once in a while I'm going to start re-posting my recipe favorites for readers who missed them the first time around.

This spicy cherry tomato sauce is something I absolutely love. I make it in the summer when I have cherry tomatoes and fresh basil in my garden. However, it's really quite fantastic with store-bought cherry tomatoes in the dead of winter. You do know the trick about smelling the tomatoes don't you? If they don't have at least some tomato smell, forget buying them. But if your store has some tomatoes with a bit of that tomato smell, buy some fresh basil and parsley and make this fantastic sauce.

Spicy Cherry Tomato Sauce for Pasta

(enough sauce for 4 servings of pasta, recipe created by Kalyn with inspiration from Epicurious.com.)

2-3 hot Turkey Italian Sausage links
(in Utah, I buy Jenno-O brand sausage)
3-4 cups cherry tomatoes, cut in half
1-2 T. minced fresh garlic (you can use minced garlic from a jar with good results)
1 tsp. or less dried red pepper flakes
(the kind you sprinkle on pizza)
1 - 2 tsp. dried oregano (or 2-3 tsp. fresh)
3 T. chopped fresh parsley (or more)
3 T. chopped fresh basil (or more)
4 - 5 T. extra virgin olive oil
Fresh grated Parmesan for serving

Squeeze sausage out of casing and cook in small amount of olive oil until slightly browned. (Mash with potato masher to get it in small pieces.) Remove sausage from pan. Add olive oil, red pepper flakes, garlic, oregano, and cherry tomatoes. Cook 3-4 minutes, until tomatoes are starting to soften. Add sausage, basil and parsley and cook 3-4 minutes more. Serve over hot linguini or spaghetti with lots of fresh Parmesan.

South Beach Suggestions:
You could enjoy this for phase two or three of the South Beach Diet if you use Dreamfield's pasta or your favorite whole wheat pasta, and turkey Italian Sausage. (I greatly prefer Dreamfields low carb pasta to whole wheat.) For phase two, have a small serving of pasta with something like Mary's Perfect Salad or Cucumber and Feta Salad.
