South Beach Recipes of the Week #24: Chicken

South Beach Recipes of the Week are those yummy, low glycemic index recipes I spot all the time on my favorite food blogs and share with people who read my blog looking for South Beach diet friendly recipes. This week I'm focusing on chicken, something that offers endless options for inventive cooks. If you're not interested in the South Beach Diet, no worries, this is just simply good tasting food.

Even though I love to cook, nothing makes me happier than finding an easy recipe that tastes great. Kristen from Dine and Dish says these Herbed Chicken Breasts are simple and delicious, and what could be better than that?

The Food Section featured this dish of Roasted Chicken with Cherry Tomatoes which I thought looked just wonderful, and great for the South Beach Diet too. He found the recipe on The Wednesday Chef, who found it in the new Bon Appetit Cookbook, one of my faves, so you see how these great tasting dishes can get around.

When I saw this recipe for Chicken with Goat Cheese and Arugula on Simply Recipes, I thought to myself, what's not to love about that? Everything in the chicken is completely South Beach friendly, but serve with cauliflower instead of the potatoes.

Finally, from FamilyStyle Food comes a chicken dish that's a little out of the ordinary. I thought this Cashew Chicken with Roasted Spiced Chickpeas sounded fantastic; just use Uncle Ben's Converted rice or brown rice to keep it South Beach friendly.counter customizable free hit
