South Beach Recipes of the Week #25:
Fish and Seafood

It's another edition of South Beach Recipes of the Week where I share some of those yummy, low glycemic index recipes I spot all the time on my favorite food blogs. When I'm reading blogs (which I spend *far* too much time doing) I'm always pleased by how many South Beach diet friendly recipes I find. This week it was recipes for fish or seafood dishes that caught my eye. If you're not interested in the South Beach Diet, no worries, this is just simply good tasting food

I'm not really sure if the wife or the husband does the photography at the great blog My Husband Cooks, but I did think this was a great shot of scallops. Their recipe for Seared Scallops with Meyer Lemon Vinaigrette sounded wonderful to me.

Another blogging duo that make interesting food is Tyler and Amanda of What We're Eating. Amanda created this recipe for Pan Roasted Mahi Mahi with Tomato and Avocado Salsa, which I thought looked exquisite. Peeking out under the fish is French Lentil and Split Puree, also very South Beach friendly, and you can also find that recipe if you follow the link.

The blogger at The Culinary Chase in Hong Kong is a personal chef, and it shows, in dishes like this one of Prawns in Salsa Fresca. The prawns are served on a bed of arugula and spinach; what could be better?

Sarah from Avenue Food says this dish of Sea Bass Fillets with Porcini Mushrooms was inspired by something she had at Da Antonio, which she says is one of the best seafood restaurants in Tuscany. I thought Sarah's version of this sounded fantastic.
