Kalyn's Kitchen Picks: Uncle Ben's Converted Rice

If you enter Uncle Ben's Converted Rice into my search bar, you'll find I've written about it many, many times. I just checked, and if Google is to be trusted, it's 339 times I've mentioned this product. That goes up to 340 after this is posted, and for anyone who's wondering, Uncle Ben's is not paying me anything to write this. Is anyone wondering why I like this rice so much?

If you're a South Beach Dieter, you know the South Beach Diet recommends brown rice. I like brown rice, and do eat it in things like Brown Rice with Cashews and Herbs or Brown and Wild Rice with Pine Nuts and Thyme. But there are dishes that need white rice.

South Beach is all about eating foods that are low on the Glycemic Index. (Even if you're not a South Beach Dieter, it's something doctors are paying more and more attention to.) I love knowing that Uncle Ben's Converted Rice is one of the lowest glycemic index types of rice you can buy. (Be sure not to get the *instant* type, which is not low glycemic.) The word "converted" in the name refers to the fact that the rice is parboiled, something that makes it more nutritious. It's delicious too, and was supposed to have been Julia Child's favorite type of rice.

My family often has raging rice arguments. There are three aunts who will not abide anything but Uncle Ben's rice. So, I started to smile when I saw this post. :) It brings back some good memories.

Ah! I'm off Phase One! Well, I will be in a day. But I'm going to go easy on this stuff. I do love it. The only kind of rice I like better was from the Camargue.

If you go to a Hispanic /Carribean market or aisle in a larger market, you may find Canilla Golden rice. Its parboiled as well and My mom is is a beans and rice freak . She put me on to it.
Personally I think it taste better than Uncle Ben's.
It may be hard to find but its worth the effort.

I am curious as to whether or not you can get this Uncle Ben's Rice in bulk packaging? Do you happen to know, because I have a large family?

Adam I know that it comes in large bags because I used to buy them at Costco. Now my Costco doesn't carry it any more, but I don't know if it's still sold in that size package.

I didn't know about this type of rice and I have been craving rice pudding. Wonder if this would be South Beach friendly if I used sugar-free pudding. Definitely plan to pick up a box.

Kathy, you'd have to use skim or 1% milk, and even then I would say rice pudding is probably phase three, but give it a try if you're really craving it.

I don't know the answer to that for sure; I just know it's the lowest glycemic index type of white rice.

(I just googled "glycemic index of Uncle Ben's Converted white rice vs. Uncle Ben's brown rice" and found a few sites that said this rice is lower than brown rice, but don't know how reliable the information is. And they were not specifically comparing the converted rice to Uncle Ben's brown rice, just brown rice in general.)

I have used this rice for years. Love it! It takes awhile to cook. So I will cook several batches in my rice cooker/steamer and freeze. So much easier to just thaw and reheat for an evening meal. Our Sam's stopped carrying it in bulk. Was at another Sam's in another town and found it. I have a 3 year supply now. :) Love the recipes!

Mel good idea to cook a big batch! I used to buy the big bags at Costco, but they don't have them any more either.
