South Beach Recipes of the Week #26: Eggs

South Beach Recipes of the Week are those delicious, low glycemic index recipes I find on my favorite food blogs and share with readers looking for South Beach diet friendly recipes. This week I'm doing recipes with eggs, a perfect South Beach food. If you're not interested in the South Beach Diet, no worries, I bet these recipes will still sound pretty good.

First, one of the more interesting egg dishes I've seen is this version of Turkish Scrambled Eggs (called Menemen) from Burcu at Almost Turkish Recipes. With eggs, tomatoes, green onions, peppers, parsley, and feta cheese, everything here is very South Beach Diet approved.

Isaiah from Gluten-Free By the Bay uses gluten-free bread crumbs in this Artichoke and Broccoli Frittata, but you could use 100% whole wheat bread crumbs instead to make this South Beach Friendly, (or you could leave them out entirely if you wanted.) I especially liked the idea of artichoke hearts and broccoli combined here.

I love goat cheese combined with eggs, so this recipe for Herb and Goat Cheese Scrambled Eggs really caught my eye at Once Upon a Feast. Ruth gives several suggestions for the herbs, and even a tip on how to cook the eggs if people in your house have different preferences on how they like them.

  1. All of these recipes are so appealing -- I love eggs, and frittatas (or frittata-like dishes) are my go-to during the week when I've got bits and pieces of things in the fridge.
