Kalyn's Kitchen Picks: Bella Sun Luci Sun-Dried Tomatoes

Today I'm going to be raving on about sun-dried tomatoes, a topic that makes me smile. For quite a few years I used to make my own dried tomatoes, and I still have the food dehydrator to show for it. That was before my beloved Costco started carrying these enormous jars of award winning sun-dried tomatoes for a price that's so ridiculously low, I can't even remember it. (Edit - checked the price when I was at Costco and it's $7.39 for two pounds of sun-dried tomatoes!) The tomatoes come from Mooney Farms, a California company which also makes pesto, pasta sauce, and marinades featuring sun-dried tomatoes. If there's no Costco where you live, this same brand comes in smaller jars at my grocery store.

That jar is a whole lot of sun-dried tomatoes, but these will stay good in the refrigerator for months and months. They come packed in oil, but if you're squeamish about fat content, you can rinse the oil off with hot water. Sun-dried tomatoes are such a versatile ingredient that there are endless ways to use them. Here are two great recipes featuring sun-dried tomatoes that I've posted in the past. This is amazingly delicious Sun-Dried Tomato Pesto spread on whole wheat pita. I just thawed out some of this which had been frozen since last summer, and it was awesome.

Maria, this is the same pesto I served to you and Kym when you came to dinner! I ate some the next day on roasted veggies, just fantastic.

I just saw these at Costco yesterday but I wasn't sure if they were good and afraid they might be too much. But next time maybe I'll buy a jar. Thanks for the suggestion Kalyn!

Maria, you're right. I need to make some more of that pesto! I think I have one or two little containers of it left in the freezer.

I remember that sun-dried tomato pesto recipe! I really need to try it. I'm constantly amazed at how many delicious, original recipes you come up with--and how much you cook in general. You're such an inspiration, but at the same time I have to admit you kinda make me feel like a slug in the kitchen, too. : )

Farmgirl, you are so sweet, but you are NOT a slug in the kitchen. You make bread! You make pizza! I never make complicated things like that (although I keep threatening to try.) During school I actually cook on Saturday and Sunday and maybe one week night, that's all. The rest of the time I eat leftovers! I do cook more in the summer, but mostly simple things. I'm glad you like the recipe links. I like finding them when I have time.

I think that's even the same brand I used. Looks very familiar. I've been using sun-dried tomatoes as a stuffing for whole chicken with garlic, rosemary and thyme.

This stuff is amazing!!!! my personal favorite is the Bella Sun Luci pesto, which i can honestly eat right out of the jar! I don't have a Costco near me, but i pick up my sun dried tomato pesto at my Safeway! along with their whole tomatoes and halves in Olive Oil!
