If anyone's paying attention out there they might be saying, South Beach recipes of the month would be more like it! I know I'm overdue for one of these posts where I share low-glycemic recipes I find on my favorite food blogs, although there are still a lot of South Beach Recipes of the Week in the recipe archives. I've been seeing so many good salads recently, I wanted to spotlight a few that would work for South Beach Dieters. If you're not a South Beach Dieter, I bet they still look pretty good!

The first salad that caught my eye was this Minty Zucchini and Tomato Salad by my pal Ilva from Lucullian Delights. What a simple but great combination of flavors. Doesn't her food always look so good?

I love snow peas, so this Warm Snow Pea and Chicken Salad from Culinary in the Country really sounded good. This recipe uses cashew butter which some people probably don't have, but Joe says you can substitute peanut butter.

Quinoa is a type of high-protein grain perfect for South Beach phase two or three, and Tea of Tea and Cookies has recently discovered she likes it. I've only used quinoa once, but this Red Quinoa Salad is making me want to use it more often.

I haven't yet seen the cookbook, Chocolate and Zucchini written by Clotilde of Chocolate and Zucchini, but Adam says he's been reading it in bed and picked up the ingredients to make this Zucchini Carpaccio on a trip to the Farmers Market recently. I love the idea of thinly sliced zucchini, topped with goat cheese and slightly marinated in a rasberry or balsamic vinaigrette. What a perfect way to eat garden-fresh zucchini, and perfectly South Beach friendly too.

I love Thai food, so the idea of this Beef, Raddicchio, and Green Bean Salad with Chile-Lime Dressing from CookThink really sounded great to me. There's a small amount of honey in the dressing, but it shouldn't be a concern for South Beach dieters, since each salad will have a miniscule amount of honey.
