Happy Father's Day to My Shrimp-Loving Father!

There's no doubt that this Shrimp and Macaroni Salad is my dad's favorite!

My dad loves shrimp salad above all other foods, so when we had the family Father's Day party on Thursday he requested I bring Shrimp and Macaroni Salad, something I've been making for him for years. Dad doesn't mind that I make the salad with low-glycemic Dreamfields Pasta; he thinks my shrimp and macaroni salad is the greatest. My husband and I are starting a South Beach-style diet tomorrow (basically detoxing from all the sugary and processed foods that we shouldn't be eating anyway), and I'm looking forward to trying some of these great recipes.   5. I miss summer so much. One of our favourites is prawns (shrimp), mango, avocado and red onion with an orange infused dressing. Yum, yum, yum!

  9. I've already printed out this post in preparation of making it tomorrow. I've access to fresh shrimp all year long, and will try it that way. There is always lots of liquid in the package, so I'll save that in lieu of the liquid mentioned in the recipe. Gosh, I wish I had the ingredients to make this right now!

    PS: How wonderful that you have a dish that your dad specifically requests. That is so sweet and really warmed my heart when I read it.

  11. Hi Kalyn, Your blog is quite amazing! Mine is almost a year old and I'm still working on it, trying to improve it. I try to eat low-carb, but pasta presents a real challenge to me. I actually had an allergic reaction to Dreamfields because of the inulin, which I found I am sensitive to. Now I read the labels carefully and avoid anything with inulin in it. I really like your site with the emphasis on low carb and will be perusing your recipes. If I make any, I'll be sure to let you know. If I post any on my blog I'll give you credit of course.
