Fourth of July Grilling Ideas (2008 Edition)

Last year I offered readers some Grilling Ideas for the Fourth of July. Now it's a year later and lots more delicious things have been cooked on my grill, so here are some new grilling ideas for the Fourth of July 2008.   1. Wow, that eggplant looks amazing. Eggplant is one of those things I want to like more than I do. The truth is, I just don't know how to prepare it. Happy 4th!

  2. Ooooh, today is my lucky day! I came across your blog when I googled asparagus and south beach, and I'm IN LOVE! How does the south beach recipe of the week work though? I saw that you Have "week 20", then phase I recipes??? Thanks for sharing all the great recipes. We're having roasted asparagus tonight! Can't wait!!!!

  3. Caroline, that was how I felt too before I started grilling eggplant. Now I love it. Try one of these recipes.

    Kristal, I'm not doing South Beach Recipes of the week any more. They were round-ups of recipes I found on other blogs that were South Beach friendly, but I just couldn't keep doing it once a week. You can still find good recipes there though by checking the page in the recipe archives (left sidebar, top.)

    What I realized was that it's phase one recipes people need help finding, so Now I'm doing South Beach Diet Phase One Monthly Recipe Roundups.

  5. I love, love, love the grilled eggplant Kalyn! What a wonderful BBQ recipe for vegetarians - so much better and chic than the standard veggie burger. I usually grill marinated mushroom, but now will surely try this one!

    Meena, thanks! The spicy grilled eggplant was my brother's total favorite from the blog last summer. He still talks about it whenever someone mentions eggplant. This recipe is part of the reason I have four eggplant plants in my garden!

  9. On Memorial Day this year, I used the tarragon-mustard marinade for chicken and the chile-mustard marinade for shrimp. They were both delicious!! I am now obsessed with the chile-mustard one, and I'm thinking that it would also work well on salmon. Thanks for the great recipes!
