I hope this post about How to Make Turkey Stock is going to be useful when that big turkey carcass is staring you in the face! One of my favorite things about Thanksgiving is filling the house with good smells from a big roasting pan of turkey bones and veggies simmering on the stove. And turkey soup is a Thanksgiving tradition in many families, and personally I believe homemade turkey stock will take turkey soup to a whole new level.

I’ve been making stock from my leftover turkey for years and years and years! But I’m not a stock purist; I think a little Penzeys Turkey Soup Base is such a good way to bump up the flavor. I’ve been using that for many years, both for turkey gravy and turkey stock (and Penzeys has never paid me to mention it, just in case anyone is wondering.)

But if you didn’t order that in time for Thanksgiving there are other good brands of turkey soup base. And this post also shares more tricks to making turkey stock taste good. If you do end up with a turkey carcass, I hope you have fun making turkey stock!

One reason I love making Turkey Stock:

I love using turkey stock for the flavor boost it gives to turkey soup. But another thing I love (especially in these days of rising grocery costs) is that the stock is made from turkey parts that might just be thrown away! And if you save veggie scraps in the freezer you can save money that way too!

Is Turkey Stock Gluten-Free:

I always use either Penzeyโ€™s Turkey Soup Base (affiliate link) or Better than Bouillon Turkey Base (affiliate link), but I do want to caution that after researching it a bit I can’t confirm that either of those are completely gluten-free. (I’d love to hear about it in the comments if anyone has more information.) Be sure to use a turkey base that’s gluten-free if that’s needed in your household.

How do you store turkey stock?

Homemade turkey stock will stay good in the fridge for at least a week if you’re going to use it to make soup. The turkey stock can be frozen for months and months, and it’s great to pull out of the freezer to make soup during the winter!

How to Make Turkey Stock:

  1. Start with turkey scraps, including things like skin and bones.
  2. Don’t add turkey “giblets” which often come packed inside the turkey.
  3. Add a generous amount of onion, celery, and carrots.
  4. I leave the vegetables in fairly big pieces so they’re easier to scoop out.
  5. Put the turkey scraps and bones, carrots, celery, and onion into a soup pot, add some thyme and sage and a bit of Penzey’s Turkey Soup Base (affiliate link) and cover with water.
  6. If you don’t have Penzeys Turkey Soup Base, another brand I’ve used is Better than Bouillon Turkey Base (affiliate link), which is sold in many grocery stores.
  7. If you have a big roasting pan you cooked your turkey in, simmer the stock right in the pan.
  8. Let the stock simmer and reduce all day, until the flavor is as concentrated as you’d like it.
  9. Then strain the turkey stock and put it into containers for the freezer, and you can enjoy turkey soup all winter long!

Ingredients

  • turkey scraps, bones, and skin from the turkey carcass (not giblets)
  • onion
  • celery
  • carrots
  • water to cover turkey and vegetables
  • turkey soup base, preferably Penzeys Turkey Soup Base
  • dried thyme (preferably ground thyme)
  • dried sage (rubbed sage)

Instructions

  1. Start with as many turkey scraps as you can possibly save from the turkey, including things like skin and bones that you might otherwise throw away.
  2. Donโ€™t add turkey โ€œgibletsโ€ which often come packed inside the turkey.
  3. Along with the turkey scraps and bones, be sure to include a generous amount of onion, celery, and carrots. This is a good place to use things like the celery ends or leaves that get cut off.
  4. I leave the vegetables in fairly big pieces so theyโ€™re easier to scoop out at the end.
  5. Put the turkey scraps and bones, carrots, celery, and onion into a large soup pot, add some thyme and sage and a bit ofย Penzeyโ€™s Turkey Soup Baseย (affiliate link)ย and cover with water.
