South Beach Diet Phase One Recipes Round-Up from October 2008 (Low-Glycemic Recipes)

Chile Rellenos BakeThis delicious Chile Rellenos Bake was
Kalyn's favorite phase one recipe for October 2008.

Each time the month ends I start thinking I haven't found many recipes for the end-of-month round-up, and then when I look at my del.icio.us page (where I save the bookmarks) I find a lot of great recipe links. That's good news for anyone who's trying to avoid empty carbs whatever the reason; apparently plenty of food bloggers are cooking delicious low-glycemic foods. I'm also including a few recipes that can be easily adapted to make them phase one, with those changes noted.  (You can use the label Low-Glycemic Recipe Round-Ups to see all the posts like this one.)

Before I get to the recipes for October, one quick announcement. My e-mail from Comcast was down for nearly 18 hours earlier this week. I assumed those e-mails would be coming later but that hasn't happened. I also think e-mail I wrote during that time might not have been sent. If you sent me an e-mail about something and haven't heard back, your message was probably never received; please write to me again.

Did I Miss Your Phase One Recipe?
Phase one menus for the South Beach Diet focus on lean meats, seafood, eggs, dried beans, soy products, low-fat dairy products, nuts and seeds, and most vegetables. Phase one doesn't permit fruit, alcohol, bread, rice, pasta, potatoes, sugar, or any foods high in saturated fat. Obviously I can't find every phase one recipe, so if you're a food blogger who posted a recipe you think would be approved for phase one and I missed it, please feel free to e-mail me the link at kalynskitchen (at) comcast (dot) net. I'll take a look, and if the recipe is phase-one friendly, I'll add it to next months roundup. (Please don't leave recipe links in the comments. They will not be published.)

Sarah, you're so welcome.

CC, you're right, everyone needs a Rand. He's so amazing (not to mention generous!) Aren't the chestnuts just so fun!

thanks for the inclusion in the round up : as for that internet server being down, it's like that half the time where i live...

Maria, what was so odd is that my internet connection was fine, and I was getting some of my e-mail, but not most of it. No idea what was wrong, but I'm happy it's now fixed!

I want a Rand too!! Love the seasonal banner. Changing banners always involves so much cursing and weeping and rending of clothes in my house that I try not to do it too often ;-)

Thanks so much for including my bake in your round-up - it really was such a happy inspiration. If you were still after the crunch on top, without the breadcrumbs, you coudl always replace the breadcrumbs with crushed almonds or nuts of your choice :)
