One of my top ten ideas for Turkey Leftovers is Turkey and Cannellini Bean Soup with Sweet Potatoes and Rosemary.
(Updated Thanksgiving 2009) It's Thanksgiving Day and all over America people have spent weeks thinking about the menu. I've tried to help those who aren't completely abandoning their diets with Thanksgiving Recipes that are tasty and South Beach Diet friendly as well. Today I'll be spending the day at my sister's house enjoying a nice holiday meal, and reflecting on all the things I've had to be thankful for this past year. I hope my readers are having a wonderful holiday too, spending time with people you love. I'll be (gasp!) taking a few days off from blogging after Thanksgiving but before I sign off I want to share my favorite ideas for using leftover turkey.
If you're going to make any of the soup recipes I've included, I highly recommend you start by simmering the turkey carcass and making turkey stock. Nothing can compared to the flavor of soup made with homemade turkey stock, plus making your own stock from leftovers is like getting free food!Now, here's my top ten list of what to make with that leftover turkey. I like all these recipes, so they aren't ranked in order, but I'd love to hear in the comments about which looks best to you!

I'm going to try (hopefully) my first turkey soup this year. LOVE the turkey barley one. Best one I've seen all day. That will go on my short list.
I'm all over that soup with the lime in it... you're so right- the lime gives it that special flavor that you can't leave out!

A belated Happy Thanksgiving! I was traveling, so there are no leftovers in the house. However, after getting a look at that black bean recipe, I may have to roast a turkey myself!
I'm eyeing that turkey barley soup Kalyn! There's still lots of turkey left over, so your soup will be simmering over my stove tonight!
ugh! you just reminded me I forgot to ask for the turkey carcass so I could make stock. I'm so so so bummed. I was looking forward to some turkey soup. i can't wait to try the rice cabbage turkey salad. i love cold rice salads and my whole family loves red cabbage.

Lea Ann, I agree it's hard to beat a turkey sandwich, but no mustard? I would need mustard on it, and if you can make the sandwich from leftover rolls, that's my favorite!
