Recipe for Low-Sugar Double Blueberry Yogurt Parfait

Low-Sugar Double Blueberry Yogurt ParfaitIt's been fun reading responses people have shared on the Five-Year Anniversary post, and there have been more than a few of you asking for more low-sugar desserts, so this idea I came up with recently seemed like a good post for today. I served this as a dessert, but it could also be the type of dish you'd serve at a brunch, especially if you made a larger version in a single dish. I'm not someone who cares a lot about desserts, so if I'm going to make a dessert it will be a simple dish like this that can be made in a few minutes, and this was easy to make with lots of flavor.

For two servings, you need 1/2 - 1 cup blueberries. I used frozen blueberries, which I let thaw before using.

The other blueberry ingredient in the "double blueberry" is this blueberry flavored agave nectar. Madhava also makes a raspberry-flavored agave nectar is you had reaspberries and wanted to make a double raspberry parfait! (I think this would also taste pretty good made with regular agave as well.) If you've been reading some of the warnings about certain brands of agave nectar, here is why I think my brand of agave nectar is safe and information about some of the myths concerning agave nectar.

I used a mixture of fat-free Greek yogurt and low-carb vanilla yogurt. You can use all Greek yogurt or all vanilla too, depending on how much you like the slightly-sour flavor of Greek yogurt.

Mix the two kinds of yogurt together well, so there are no lumps.

In a parfait glass, layer 1/4 the yogurt mixture, 1-2 T blueberries and 1 T blueberry agave nectar (or slightly less if you want it a little less sweet.)

Then put another layer of the yogurt mixture, more blueberries, and another Tablespoon (or a bit less) of the blueberry agave nectar. That's all there is to it. The amounts can be varied to taste, just don't skip the layering.


Low-Sugar Double Blueberry Yogurt Parfait
(Makes 2 servings but can easily be doubled, recipe created by Kalyn)

Ingredients:
1/2 - 1 cup fresh or frozen blueberries (thaw if frozen)
4 T blueberry agave nectar (or less if you'd like it a little less sweet; you could probably use plain agave nectar but it wouldn't be quite as pretty)
1 container (6 oz.) fat-free Greek yogurt
1 container (6 oz.) low-carb or low-sugar vanilla yogurt

Instructions:
Mix the fat-free Greek yogurt and the low-carb vanilla yogurt until there are no lumps. In parfait glasses, make a layer with 1/4 the yogurt mixture. Next put 1-2 T blueberries, then drizzle over about 1 T blueberry agave. Repeat with another layer of the yogurt mixture, blueberries, and blueberry agave nectar.

This will keep for a few hours, but it's best served right away.

South Beach Suggestions:
Since it has fruit and agave nectar, this recipe would be phase 2 or 3 for the South Beach Diet. I'd consider it as a "once in a while treat" for phase 2, especially if you used the full amounts of blueberries and agave nectar.

The blueberry agave nectar I used in this recipe was part of a sample pack of agave nectar flavors I received from Madhava. (I was using their products long before I received the samples, and this is the only brand of agave nectar I buy.)

Gorgeous photos. We make our own yogurt at home and I love making yogurt parfaits for breakfast or dessert. I want to try the blueberry agave. Looks wonderful.

It looks great. I find that you can also add 2 tbs of chocolate flavored natural whey protein to greek yogurt as a low sugar sweetener.

Funny, I usually like to have a very small bowl of yogurt, some blueberries on top, and a light drizzle of agave nectar (I love the stuff!) late at night. But never thought of going one step further and building a real dessert out of it.

This is my kind of dessert, too. I'm not much of a dessert eater and even less of a dessert maker, so when I do make desserts, they need to be foolproof and fruit-based. I'm definitely trying this with raspberries, which I always have in the freezer.
