There are only two more Fridays before Thanksgiving, so I thought for Friday Favorites I should share some favorite Thanksgiving dishes from past years. This week I'll spotlight favorite green vegetables (since my mom always insisted that every meal must have at least one green vegetable.) Next Friday I'll be back with my five favorite Thanksgiving side dishes. Of course there are lots more South Beach Diet friendly Thanksgiving Recipes on the blog, so visit that page if you want to see the entire list.
Let's start with the recipe for Broccoli Gratin with Swiss and Parmesan pictured above. Most everyone in my family would love to have this for a Thanksgiving veggie, although truthfully, there are some of my brothers and sisters who would still vote for the Thanksgiving Broccoli with Cheese Sauce I used to make years ago.
I absolutely adore this recipe for Roasted Brussels Sprouts with Balsamic, Parmesan, and Pine Nuts. This is the recipe that got me to reconsider brussels sprouts, and now I love them when they're roasted or pan-fried.
I've made these Garlic-Roasted Green Beans with Shallots and Almonds several times for Thanksgiving. Don't skip the shallots because the crispy roasted shallots are what make this special.
After I got converted to roasted brussels sprouts, last year I tried this recipe for Shredded and Roasted Brussels Sprouts with Toasted Almonds and Parmesan. This was so good I ate about half of it after I took that photo!
Finally, it is a bit out of the ordinary for a Thanksgiving side dish, but if you like leafy greens I'd highly recommend this Spaghetti Squash and Chard Gratin.

My family would eat almost any green vegetable if it had enough cheese on it! Your post about the Brussels sprouts with balsamic made a believer out of me, and I've made the recipe many times since.
everything look delicious! many of the vegetables are my favourite too!
I really hate brussel sprouts Kalyn, but I am tempted by those recipes and I would like to get over my dislike of them.
Thanks for the nice feedback about the veggie ideas. Jacqueline, I think *roasted* brussels sprouts are completely different than brussels sprouts cooked any other way, so do try them! (And yes, I'm awake in the middle of the night reading comments.)
I have never been a brussel sprout fan until I started roastig them... They turn into a whole new vegetable!

Sandi, me too. My mom never cooked them, and when I tasted them they always seemed too bitter until I had roasted ones. Now I love them!
Another good way to cook brussels sprouts is to cut them in half and lay cut side down in a heated cast iron skillet. Olive oil in the pan, of course. Cook a few minutes on one side then turn them over for a couple of minutes. Very delicious.

So many tempting recipes. And I agree- until you try roasted Brussels sprouts, you can't judge them. They get so sweet and complex when you roast them- especially with balsamic vinegar.

I'd like to comment on my actual experience w/this recipe,and my husbands comments as well. We bought all the ingredients,and made them as the recipe. I really,really like Kalyn,and have some of my fav.recipes from her website. However this was not one of them. I asked husband his honest opinion,DH said,'If I was on a deserted island,then I'd eat it"..That is not good enough to pay the price of the fresh chard,and the speg.squash,let alone the other ingredients. Plus the time! I figured w/all the cheese we'd be happy,plus I personally love kale. But it was not so. I do not like this recipe,and can not recommed it..No offense Kalyn, I think your great,but this is the 2nd recipe that I would never make again. I hope your ok w/a personal and honest review. I care for you and your efforts,this one was a miss for my and my family.

Anonymous, I'm sorry you didn't enjoy the Spaghetti Squash and Chard Gratin. There's no kale in this recipe though, so I'm not sure what you mean by that. I do wish you had signed your name to the comment, and also wish you had left it on the recipe for Spaghetti Squash and Chard Gratin where there are several comments from people who tried it and liked it. And obviously I liked it myself or I never would have posted the recipe or picked it as a favorite.

Yum yum yum - how ever will I pick what to make for my table? Its just me and my husband and he's not crazy for veggies, so really I just make several veggies for myself :)
And the leftovers are aaaallllllllllll Mine!

broccoli is one of my kids' favorite vegetables (along with cauliflower) - I might just give the first recipe a try for dinner tonight.
and before I forget - I made your horseradish meatloaf and it was the best meatloaf ever! everybody loved it - including the kids! (it was a bigger hit than a Jamie Oliver chicken recipe I tried the other night...) I'm going to make it again but this time with mustard instead of horseradish and see how it goes.

I LOVE all these green vegatables you have here Kalyn..with a favourite the brussels sprouts with balsamic...the only way my family eats them, is roasted in the oven, but your additions are so different and something I'm doing next time!
