Here are Ten Favorite Deliciously Healthy Green Vegetable recipes from Kalyn's Kitchen that are perfect for Thanksgiving! 

Everywhere I look these days I see Thanksgiving recipes, and for people like myself who like to try at least one new recipe every year, narrowing down your choices can be a challenge.  I want to give you lots of options, so in this post I'm sharing ten favorite deliciously healthy green vegetable recipes I think are perfect for Thanksgiving.  Every Thanksgiving dinner needs plenty of green vegetables to balance out all those less diet-friendly choices, right?  

A few of these recipes are long-time favorites, so forgive the older photos but I can assure you that every recipe here is a winner.   All these recipes are Phase One, Gluten-Free, Low-Carb, Meatless, and several of them Can be Paleo.  Hope you enjoy at least one of these on the Thanksgiving table!  (And if you want more ideas for Thanksgiving, here are all the Thanksgiving Recipes in one spot.)

Let's start with the recipe for Broccoli Gratin with Swiss and Parmesan pictured above. Most everyone in my family would love this for a Thanksgiving veggie, and I've made it several times through the years.  (Although truthfully, there are some of my brothers and sisters who would still vote for the Thanksgiving Broccoli with Cheese Sauce I used to make years ago.)

I absolutely adore this recipe for Roasted Brussels Sprouts with Balsamic, Parmesan, and Pine Nuts, even though this close-up photo style isn't my favorite any more!  This is the recipe that got me to reconsider brussels sprouts, and now I love them when they're roasted or pan-fried.

The brussels sprouts recipe I'm currently swooning over is this Roasted Brussels Sprouts with Avocado and Pecans.  If you like all three of those ingredients, you can't go wrong with this recipe.  My family has a few brussels sprouts avoiders, but I'm going to make this for the few of us who love them.(More for us!)

This is another photo I'm not crazy about, but this recipe for Roasted Green Beans with Mushrooms, Balsamic, and Parmesan has been pinned 984,257 times with the current photo, so apparently a lot of people think these beans look good!  And I promise you, you'll love this way of roasting green beans if you try it.

I've also made these Garlic-Roasted Green Beans with Shallots and Almonds several times for Thanksgiving. Don't skip the shallots because the crispy roasted shallots are what makes this special.

Another brussels sprouts favorite is this recipe for Shredded and Roasted Brussels Sprouts with Toasted Almonds and Parmesan. This was so good I ate about half of it after I took that photo!

These Lemony Green Beans are something I find myself making over and over for guests.  They cook very quickly, which makes them easy for Thanksgiving.

For a broccoli option that's not quite so cheesy but still delicious, this Roasted Broccoli with Lemon and Pecorino-Romano Cheese is easy to throw in the oven when you take the turkey out.

Asparagus is not really in season for Thanksgiving, but if you love it and don't mind a splurge you can get it at Costco. This Barely-Cooked Asparagus with Lemon-Mustard Vinaigrette really shows off the flavor of the asparagus.

Finally, it is a bit out of the ordinary for a Thanksgiving side dish, but if you like leafy greens I'd highly recommend this Spaghetti Squash and Chard Gratin.

  6. Sandi, me too. My mom never cooked them, and when I tasted them they always seemed too bitter until I had roasted ones. Now I love them!

  7. Another good way to cook brussels sprouts is to cut them in half and lay cut side down in a heated cast iron skillet. Olive oil in the pan, of course. Cook a few minutes on one side then turn them over for a couple of minutes. Very delicious.

  9. So many tempting recipes. And I agree- until you try roasted Brussels sprouts, you can't judge them. They get so sweet and complex when you roast them- especially with balsamic vinegar.

    Yum yum yum - how ever will I pick what to make for my table? Its just me and my husband and he's not crazy for veggies, so really I just make several veggies for myself :)

    And the leftovers are aaaallllllllllll Mine!

  15. broccoli is one of my kids' favorite vegetables (along with cauliflower) - I might just give the first recipe a try for dinner tonight.

    and before I forget - I made your horseradish meatloaf and it was the best meatloaf ever! everybody loved it - including the kids! (it was a bigger hit than a Jamie Oliver chicken recipe I tried the other night...) I'm going to make it again but this time with mustard instead of horseradish and see how it goes.

  25. I am so bummed that my family doesn't like Brussels sprouts because I'd make either one of those dishes in a heartbeat. I love the idea of the pine nuts with the sprouts and have always adored avocado. I might just have both on the table since I can't decide which sounds better.
