Of course South Beach Diet Phase One Breakfasts are also great for other low-carb or gluten-free eating plans as well.
I thought I'd spotlight some of my favorite Phase One Recipes this month. First up, I'm sharing five of my favorite Phase One breakfasts. My breakfast habits have changed a bit since I've been working at home, but pictured above are the Egg Muffins that were my favorite "grab and go" breakfast to eat in the car on the way to work when I was still teaching school. There are endless varieties of this recipe, and they're all good!
Frittatas are a type of Italian egg dish that's basically an omelet that's not folded over. When I'm doing Phase One I love to make this on the weekend and eat it for several days. Pictured above is Asparagus and Fresh Mozzarella Frittata with Parmesan and Chives, definitely one of my favorites. If asparagus isn't in the budget when it's out of season, use some other vegetable.
Egg casseroles are baked egg dishes, and you can make a large size of this and you'll have enough to microwave in the morning before work for a whole week. I have quite a few favorite recipes for breakfast casseroles, and one of them is this Roasted Green Bell Pepper and Roasted Tomato Breakfast Casserole with Feta and Oregano.
Tuscan Baked Eggs with Tomatoes, Red Onion, Garlic, Parmesan, and Herbs is a special breakfast I'd make on the weekend or when I had guests staying at my house. I promise no one will think of this as "diet food."
Finally, one more variation of breakfast casserole that I just adore is this Breakfast Casserole with Spinach, Leeks, Cottage Cheese, and Goat Cheese. Having an amazing breakfast like this to start the morning really gets a phase one day off to a good start.
