Five Favorite Phase One Recipes for Chicken Breasts (Low-Carb, Gluten-Free)

For everyone who's eating low-carb meals in January, these Five Favorite Phase One Recipes for Chicken Breasts will get you through the month!

Every year for January lots of people start the South Beach Diet, and to help them with ideas, I post all Phase One recipes on the blog that month.  I did that again this year (with an exception for the Shrimp and Macaroni Salad posted as a tribute to my dad.)   Actually, I usually end up doing phase one a couple of times each year, and often when I'm doing Phase One I want something to eat that really makes me forget I'm on a diet.  The recipes featured in this post are some ideas for using chicken breasts fit that description.  Let's start with Janet's Mustard Chicken shown above, something my sister Janet taught me to make years ago.

This Chicken with Asparagus and Three Cheeses is probably a "once-in-a-while-treat" for Phase One, so make it on a night when you really need something that tastes good.

I'm not thrilled with this photo (from the early days of the blog) but I do LOVE this recipe for Chicken Breasts with Cilantro and Red Thai Curry Peanut Sauce.  I made this recently with my niece Alyson, her fiance Nick, and her friend Rachel, and it was a definite hit.

A recent recipe that uses chicken breasts is this Baked Pesto Chicken, which has gotten a "thumbs-up" in comments from a lot of readers.

Finally, these Sauteed Chicken Breasts with Tarragon-Mustard Pan Sauce are something I'd happily eat any time of year.  I'd even buy tarragon leaves to make this in the winter when I didn't have any from the garden.

I'd say right now that the pesto chicken is calling my name. Had pesto chicken salad at a girlfriend's house recently and it was fantastic!   12. I have made the baked pesto chicken for my family several times and they LOVE it! Big hit! When ever I put the chicken in the pan with the sauce, I also add sliced mushrooms to bake with the chicken! The mushrooms taste great with the sauce!
    I did however make the chicken tarragon, and was not impressed. I don't think my taste buds liked the taste of the tarragon.

    Tarragon is definitely a strong flavor. I would not make this with dried tarragon, but I personally love the flavor of fresh tarragon.
