I vividly remember the first time I tried Laughing Cow cheese when a man named Rex Turner brought it to my house for a party many years ago. I thought it was a little strange at the time as a pot luck dish (sorry Rex!) but now I absolutely love this low-fat and low calorie spreadable cheese as a snack. Lately I've been buying it over and over and eating it so often that I decided it's time to officially make it one of my Kalyn's Kitchen Picks.
I eat this stuffed into celery when I'm doing phase one. I've even been known to eat that for breakfast, and it's remarkably satisfying. When I'm on phase 2 or 3 I love to spread it on whole-grain crackers. Because the wedges are so low in fat and calories, you can have two if you're especially hungry and not feel like you're doing something bad.
My Costco started carrying this in four packs, which has really pumped up my Laughing Cow Cheese addiction, and lately I've been thinking about experimenting with this as a recipe ingredient, but so far I've only eaten it as a snack. If anyone else has ideas for using it, I'd love to hear them in the comments.
