|I'm crazy for this Napa Cabbage and Red Cabbage Salad with Fresh Herbs and Peanuts.|
I love, love, love cabbage, so I'm thrilled it's one of those cruciferous vegetables that everyone should be eating regularly. I especially like raw cabbage in salads, both for the crunch and the slightly sweet flavor, and through the years cabbage salads have been showing up regularly on the blog. Truth is, I hard a hard time narrowing this list down to only five salads to feature for Friday Favorites, but after spending some time clicking around the long list of Cabbage Salads in the recipe archives, these five were the ones that made the cut. (If your personal favorite cabbage salad didn't make the list, I'd love to hear in the comments about which one you like best.)
I love every kind of cabbage, so one thing I like about the Napa Cabbage and Red Cabbage Salad with Fresh Herbs and Peanuts shown above is that it has both napa and red cabbage. This recipe has a slightly-spicy dressing that can be made with tahini, almond butter, or peanut butter, and you can use cilantro, mint, or basil for the fresh herbs, so it's is easy to adapt this one to individual tastes.
If I had to pick just one all-time favorite cabbage salad recipe, it would have to be this Spicy Mexican Slaw with Lime and Cilantro. Since I posted this in 2008 I wouldn't be surprised if I've made it more than 50 times!
Another cabbage salad I've made over and over is this Spicy Cilantro-Peanut Slaw. The flavors in this one are quite different than the Spicy Mexican Slaw, with an Asian dressing that includes rice vinegar, agave nectar, sesame oil, soy sauce, and just a touch of spicy Sriracha sauce.
I like Val's Sweet Cabbage Slaw with Green Onion and Parsley for the unique way it combines cabbage with a generous amount of chopped parsley, which is a combination you don't see that often in a slaw recipe. I used white balsamic vinegar in this, which really gave it a great flavor, but you can also make it with regular white vinegar.
Sometimes you make a recipe that quickly becomes a favorite, and that's already happened with this Puerto-Rican inspired Spicy Cabbage Salad with Tomatoes, Radishes, and Celery that I posted earlier this month. I made it recently when three cabbage lovers came for dinner, and they agreed it was a keeper!
Happy Friday everyone! If you're looking for things to cook on the weekend, you can visit the category of Recipe Favorites to see more individual recipes I've picked as favorites as well as other lists of Friday Favorites I've featured.
