Recipe for Spicy Cabbage Salad with Tomatoes, Radishes, and Celery (Puerto Rican Cabbage Salad)

Puerto Rico Cabbage Salad
This slightly-spicy cabbage salad got three thumbs way up when I tested the recipe!

(For Phase One Fridays I highlight Phase One recipes from the past that have been my personal favorites, and this Spicy Cabbage Salad with Tomatoes, Radishes, and Celery is one of those amazing salad combinations where the sum is so much greater than the parts.  And since we're welcoming March with a new header featuring cabbages, this salad is perfect for that reason as well.)

The minute I saw the Puerto Rican Cabbage Salad on Champaign Taste, I knew I was going to make some version of this salad, since I adore cabbage salad, and cabbage is one of The World's Healthiest Foods.  When I made the salad I loved it, and it got two thumbs up from my sister Val and brother-in-law Jon as well, and I'd say this salad is already destined to be a favorite.  After doing a little internet research about Carribean cabbage salads, I did tweak the recipe a bit, upping the crunch factor with radishes, adding some chopped celery leaves and green onions, and using just a touch of lime juice in the dressing.  With those changes I don't know how authentically Puerto Rican the recipe is, so if you're a food purist you may just want to call this "cabbage salad."  No matter what you call it, if you try this recipe I predict you'll love it just as much as I do.

Chop up 5-6 cups of green cabbage, about half of a large head of cabbage.

Chop up 1 cup of tomatoes.  (I used the grape tomatoes from Costco that I love in the winter.)

Slice about 1/2 cup of celery and chop 1/2 cup of celery leaves.  (If the celery is large, I might cut it in half before slicing.)

Cut about 6 radishes into half-moon slices and slice 1/4 cup green onions.

Toss the salad ingredients together.

Mix together the apple cider vinegar, lime juice, salt, and hot pepper sauce; then whisk in the oil, 1 tablespoon at a time.

Toss the salad with the dressing.  Can be served right away or kept in the fridge for a few hours before serving.


Spicy Cabbage Salad with Tomatoes, Radishes, and Celery (Puerto Rican Cabbage Salad)
(Makes about 6 servings, recipe adapted from Puerto Rican Cabbage Salad at Champaign Taste.)

Ingredients:
5-6 cups finely chopped green cabbage (about 1/2 large head of cabbage)
1 cup diced tomatoes (I used diced grape tomatoes)
1/2 cup celery, sliced (or if the celery is large, I would cut in half before slicing)
1/2 cup chopped celery leaves (optional, but good)
6 radishes, stem and root cut off and cut into half-moon slices (optional, but good)
1/4 cup sliced green onions (dark green part)

Dressing Ingredients:
2 T apple cider vinegar
1 tsp. fresh lime juice
1/2 tsp. salt
1/4-1/2 tsp. hot pepper sauce (I used Sriracha sauce; use any hot sauce that has a good flavor.  If you have some type of Carribean hot sauce it would be perfect in this.)
3 T grapeseed oil (or other neutral-flavored oil such as canola will work)

Instructions:
Chop cabbage, tomatoes, and celery leaves, and slice celery, radishes, and green onions.  Toss all the salad ingredients together in a large bowl.  (If making ahead use a plastic bowl with a tight-fitting lid.)

In a small bowl, mix together the apple cider vinegar, fresh lime juice, salt, and hot sauce to taste.  (I would start with a smaller amount of hot sauce, because you can always add more.)   Whisk in the oil, one tablespoon at a time.  Taste to see if you want to add more hot sauce.

Toss salad with desired amount of dressing.  (You may not need all the dressing if you omit some of the optional ingredients.)  Salad can be made ahead and stored in the refrigerator for a few hours, and is even surprising good when it's been refrigerated overnight.


South Beach Suggestions:
This salad is loaded with healthful low-glycemic ingredients, and is a great choice for any phase of the South Beach Diet.

I chose the South Beach Diet to manage my weight partly so I wouldn't have to count calories, carbs, points, or fat grams, but if you want nutritional information for a recipe, I recommend entering the recipe into Calorie Count, which will calculate it for you.

Yum! This is definitely my kind of salad. And I love Lisa's suggestions on her post to stuff it in pitas or top tacos with it. Can't wait to try it, especially since I've been on a radish kick lately.

I am going to try this and use peppers in place of tomatoes (unfortunately raw tomato is not my thing). I love a good cabbage salad and Siracha is so yummy!

I recently substituted radishes for capsicum in fattoush with very good results (you know, I was out of capsicum). Love any sort of cabbage salad and this looks a very good one.

I'm not sure where to post this question..if I'm in the wrong place let me know. It's my third day on sb and I'm not sure what going on. First the indigestion is killing me, second headache all day. All around a bit cloudy. Is this common? I'm trying to get through the first week any suggestions? I'm eating what is listed coffee,eggs vegies, salad huge, and at night the recommend dinner. Can anyone give me any advice.

Crystal, I don't know what to answer about a question like that as I'm not qualified to give dieting or medical advice. I didn't have any of those kinds of issues with phase one (in fact, after a few days I usually feel better than usual.) I'd recommend re-reading the book and checking with a doctor if those problems persist.

Love this one, Kalyn! Just pinned/tweeted! I've never been a radish lover, but I've vowed to give them another go and being ready to return to eating salads much more often, this salad looks like a good place to start testing them out again. ;-)
