Low-Glycemic Recipes from My Food Blogging Friends

Last month I had the idea of periodically sharing low-glycemic recipes from my food blogging friends.  My thinking was that I'm spotlighting phase one recipes from other blogs in the monthly Phase One Recipe Round-ups, but actually people who end up committing to the low-glycemic way of eating only stay on phase one for a few weeks.  There are plenty of delicious foods you can eat for phase one, but once you get past those two weeks and start adding healthy whole grains into your diet, there are even more tasty options for a low-glycemic diet.  (If you don't know what I'm talking about, Wikipedia does a good job of explaining the glycemic index, a healthful way to eat for everyone whether or not you're trying to lose weight or have blood-sugar issues.)

So here's another collection of low-glycemic recipes I spotted on some of the food blogs I read regularly, starting with the very tasty-sounding Roasted Vegetable and Barley Salad shown above from FamilyStyle Food.  I love using my toaster oven to roast vegetables all year long, but you could also roast these in a pan on the grill, and this sounds like a perfect summer salad.  (This would be phase 2 or 3 for the South Beach Diet.)

The next thing that made me drool was these Eggplant Chips with Cilantro Pesto from What's Gaby Cooking.  Cilantro pesto is something I could probably eat on just about anything, but the eggplant chips also sound especially good!  (This recipe would be all phases for the South Beach Diet, but limit portion size of the pesto for phase one because of the cashews and asiago cheese.)

Chickpeas.  Curry.  Mayo.  Celery.  Lemon.  Cilantro.  If you know my tastebuds at all, you can see how much this Curried Chickpea Salad from The cooking Adventures of Chef Paz would appeal to me.  There is only the tiniest bit of mayonnaise, but I'm guessing it makes a lot of difference.   (This would be all phases for the South Beach Diet, but for phase one portion size on dried beans is limited to 1/3 - 1/2 cup, so I'd probably eat it for phase 2 or 3.)

This Wheatberry Salad with Zucchini and Mozzarella from Eats Well with Others is another one where I just had to read the ingredients to know it would be a hit.  If you need a gluten-free variation, I think brown rice would be good in this as well.  And when you go to get the recipe, be sure to congratulate the talented Joanne who's well on her way to becoming a doctor!  (This would be phase 2 or 3 for the South Beach Diet.)

I never met a taco salad I didn't love, but the black quinoa in this Vegetarian Black Quinoa Taco Salad from Lauren's Latest made it sound especially interesting.  If you're a South Beach Dieter, please ignore those corn chips on top and in the list of ingredients, and you can't go wrong with this combination.  (This is phase 2 or 3 for the South Beach Diet, and use a little portion control on the avocado, sour cream, and cheese.)

Cold soups are something I could never get too excited about until a few years ago when I first made Gazpacho with some of my blogging friends.   That experience really opened my mind to just how delicious a cold soup can be, and this Avocado and Cucumber Gazpacho from Running with Tweezers sounds amazing to me.  I have this bookmarked for later in the summer when I have too many cucumbers and no desire to turn on the stove!  (This would be great for all phases of the South Beach Diet.)

I wanted to run to the store and buy avocados when I saw this idea for Avocado Egg Salad from The Pioneer Woman Cooks.   It looks delicious the way Ree shows it piled on a tomato, but I'd probably go for the version later in the recipe where it's eaten in a sandwich on some whole-grain bread.  (Served on tomatoes this would be all phases for the South Beach Diet.  If you eat it on a sandwich with 100% whole grain bread it would be phase two or three.  Use portion control because avocados and mayonnaise are both limited foods.)

Finally, I'm intrigued by this Gluten-Free Almond Flour Pizza Crust from Ginger Lemon Girl.   The crust is made primarily of almond flour, with canned beans, eggs, and olive oil for the wet ingredients, so this is a very low-glycemic pizza crust indeed.  Of course if you're a South Beach Dieter you'd have to use turkey pepperoni, low-fat cheese, and low-sugar tomato sauce if you made the pizza in this photo (see those ingredients in my recipe for South Beach Diet Friendly Flatbread Pizza if you're curious.)  I'd love to try this recipe as a flatbread too, maybe with rosemary and parmesan.  (This would be phase 2 or 3 for the South Beach Diet, and be sure to use toppings that are South Beach friendly.)
