Twenty-Five+ Healthy Recipes Using Leftover Turkey (or chicken) and Happy Thanksgiving Everyone!

If you're lucky enough to end up with some leftover turkey, here are 25+ Tasty Recipes Using Leftover Turkey (or make them with chicken if you don't have turkey!)

(Updated in November 2014 with more new ideas for leftover turkey recipes.)  I love to write round-up posts spotlighting my favorite recipes, but the problem with food blogging is that every year you try more recipes that end up being favorites.  That's why I'm changing the title of this post to 25+ Tasty Ideas for Leftover Turkey, so I can add a few new recipes from 2014 to this list.  I know you don't have leftover turkey yet, but I have family members at my house for the big day and I wanted to get this posted before I get too busy making food!  (And here are all the Carb-Conscious Thanksgiving Recipes in case you still need them!)

This year, and every year  I love the idea of a holiday dedicated to feeling gratitude, something I try to focus on every day.  And without turning this into a long list of all the things I'm thankful for, let me acknowledge how much I feel blessed to have a life filled with family, friends, interesting work, and all the cooking tools any food obsessed person could ever want! 

And on Thanksgiving and every other day I also give thanks for the people who read this blog and leave nice comments or send e-mails that enrich my life.  For all my U.S. readers, I wish you a wonderful Thanksgiving celebration that's filled with love and good food!

We loved this Low-Carb Turkey Casserole with Mushrooms, Mozzarella, and Cauliflower Rice, and if you want a grain-free and gluten-free recipe you can't go wrong with this one.

Another delicious option for leftover turkey (and a recipe that's been wildly popular this year) is this Green Chile and Chicken Mock Enchilada Casserole.  Just switch the chicken for turkey and enjoy!

You can use turkey to make this Low-Carb Green Chile Chicken Enchilada Casserole; this recipe uses low-carb flour tortillas, and it's pretty low in carbs for a dish like this.

You can't go wrong with this Layered Mexican Casserole with Chicken (or turkey), Green Chiles, Pinto Beans, and Cheese.  This has been a hit with everyone I've made it for!

New in 2013 but already a big favorite is this Slow Cooker Lemony Turkey (or chicken) Soup with Spinach and Orzo.

This Leftover Turkey (or Chicken) Shepherd's Pie with Garlic-Parmesan Cauliflower Topping was a delicious way to use turkey leftovers, including gravy.  (Or just buy some gravy like we did so you can make this!)

If you're really wanting to get back on track after the holiday, this Leftover Turkey (or Chicken) Salad with Indian Spices, Lemon, and Cilantro was delicious and it's a Phase One salad.

Another new chicken salad that I loved that would be perfect with leftover turkey is this Chicken, Black Bean, and Red Pepper Salad with Spicy Avocado Dressing.

This Coconut-Lime Turkey (or Chicken) and Rice Soup is one of the most interesting recipes for turkey soup I've ever tried.

If you're a fan of sweet potatoes, you'll like this Leftover Turkey and Sweet Potato Soup with Black Beans and Lime.

This Turkey (or chicken) Lasagna with Sage and Three Cheeses has been a hit with everyone who's tried it.

Cabbage adds a healthy and slightly unusual twist in this Turkey and Wild Rice Soup with Cabbage, Parsley, and Sage.

Amy's Amazing White Chicken Chili is made with chicken breasts, but you could use white turkey meat to make this amazing chili as well.

I would gobble up leftover turkey if it was used in this recipe of Spicy Whole Wheat Sesame Noodles with Chicken, Green Onions, and Cilantro.

And for sure you could use leftover white turkey meat in this Shredded Chicken Salad with Green Olives, Celery, and Green Onion.

For cilantro fans like me, this Leftover Turkey (or ground turkey) and Pinto Bean White Chili with Lime and Cilantro will be a hit.  (To make with leftover diced turkey, just add the turkey towards the end of the cooking time.)

  1. Hey Kalyn! I tracked your blog down through forums for the YUM recipe manager software. I'm wondering if you still have a working copy of it? I made the mistake of not exporting the right kind of file before upgrading and now I can't see any of my recipes. :( I'm trying to track down anyone that would be willing to open my file and export it again in the right format. There are only about 50 recipes, so it's not a large file.

    If you can help, I'd be eternally grateful!

  3. CA, sorry but I have never heard of that. But I do have a new feature on the blog that lets you save recipes to your own recipe box through Ziplist. You can access it on any site that's signed up with Ziplist, so the file can never get lost.

  7. Lovely sentiments, Kalyn, and wow on this recipe roundup! I was tickled to figure out 10 turkey leftover recipes for a roundup on my blog. 20 shows how many awesome recipes you have in general. Those soups look so appealing on this chilly morning, but I can also see how people could not resist that lasagna. It sure makes me wish I had some gluten-free lasagna noodles on hand. ;-) (Hmmm,maybe I should make some homemade gf lasagna?)
