South Beach Diet Phase One Recipes Round-Up for January 2012 (Low-Glycemic Recipes)

How could I choose just one favorite Phase One Recipes from a Month of Daily Phase One recipes?  Pictured is Tuna Salad Lettuce Wraps with Capers and Tomatoes, Ham and Cauliflower Casserole Au Gratin, Vegan Heart of Palm and Avocado Salad with Lime, Green Onion, and Cilantro, and Quick Sriracha Beef Lettuce Wraps.

We just finished a Month of Daily Phase One recipes, which means 31 delicious Phase One recipes have been featured on the blog this month!  That alone guarantees that this will be a big round-up of Phase One recipes, and you can bet plenty of other bloggers were also featuring diet-friendly recipes during January as well.  I always post only Phase One recipes during January, but this was the first year I committed to doing a Phase One recipe every day, and truthfully it was a lot of fun.  I also heard from lots of people who loved seeing the Phase One recipes I spotlight from past years, which made me think maybe that's something I'll do a little more often, maybe as a Friday night feature.

But for now, on to the round-up of all the Phase One recipes I've posted this month or found on other blogs.  Of course, I always find things that could easily be made Phase One with minor changes, so those things are noted.  And I probably didn't find all the Phase One recipes that popped up during January, so if you're a food blogger who's posted something that might be a new idea for Phase One, see after the recipe links for how to submit it.

Did I Miss Your Phase One Recipe?
Phase one menus for the South Beach Diet focus on lean meats, seafood, eggs, dried beans, soy products, low-fat dairy products, nuts and seeds, and most vegetables. Phase one doesn't permit fruit, alcohol, bread, rice, pasta, potatoes, sugar, or any foods high in saturated fat. Obviously I miss lots of phase one recipes, so if you're a food blogger who posted a recipe this month that you think would be approved for phase one, please feel free to e-mail me the link at kalynskitchen (at) comcast (dot) net. Hurray for you, Kayln ! Your phase one round-up for January 1212 is the best ever ! I made the balsamic vinegar-onion pot roast in the crock pot for a friend last night and she LOVED it, told her daughter who requested the recipe..I sent her your web-site and she's making it for 14 this weekend ........You ROCK !!!!!

Kalyn, this is perfect timing! I decided to go on Phase One because I have some knee surgery coming up and dropping a few or 20+ pounds would be helpful! Can't wait to dive into the recipes! Thank you!
