Ten Easy Ideas for Vegetables on the Grill
For Meatless Monday, here are ten of my favorite ideas for vegetables on the grill.

It's no secret that I love grilling, but I'm especially a fan of vegetables on the grill.  Partly it's the combination of fresh garden vegetables coupled with a lack of desire to turn on the stove this time of year, but I also think grilling also adds a little extra flavor to most any kind of vegetable.  This week there's a big grilling holiday coming up in the U.S., so for this week's Meatless Monday post I thought it would be fun to share some of my personal favorites for vegetables cooked on the grill.  (All these recipes are things I like so much I might even make them indoors on a stove-top grill pan if it wasn't grilling weather!)

Let's start with Whole Wheat Orzo and Grilled Vegetable Salad with Feta, Olives and Herbs pictured above.   Doesn't that sound like a great summer side dish?

Even if you think you're not that much of an eggplant fan, if you like Thai flavors I bet you'll like this Spicy Grilled Eggplant and Zucchini Salad with Thai Flavors.


A classic salad that would also be delicious for a summer side dish is this Tapas Salad with Grilled Bell Peppers, Olives, and Capers.


They couldn't be easier, and Easy Grilled Mushrooms are something that will dress up any plate.


Something I make all summer long are these World's Easiest Grilled Vegetables.


Grilled Zucchini replaces the traditional cucumbers in this recipe for Grilled Zucchini Greek Salad.


My brother Rand has a lot of favorites on the blog, and one of them is this Spicy Grilled Eggplant with Red Pepper, Parsley, and Mint.


Simple Grilled Zucchini is something else I make all summer long.  I might serve this with a sauce like Basil, Arugula, Scallion, and Lemon Pesto Sauce or Roasted Red Pepper and Garlic Aioli Sauce.


One of my favorite grilling experiments that turned out to be a keeper is this Grilled Sweet Potato Salad with Green Onion, Basil, Thyme, and Feta.


And finally, another delicious take on grilled eggplant is this Grilled Eggplant with Cumin-Garlic Vinaigrette, Feta, and Two Herbs.

Kalyn, you have a way of making salads look like the star of the show. That eggplant one with Thai flavors has caught my eye.

Thanks, Kalyn, for some great ideas for Wednesday. My husband is going to grill a chicken, and any one of these dishes would be the perfect pairing. I have two different grilling pans for vegetables - that's how much I love to avoid the kitchen in July. Somehow, getting out a special grilling pan makes it more of a ritual.

Every one of these recipes is a winner. I agree, roasting really brings out the flavor. Next year, I must grow some of those wonderful 8-ball zucchini!
