|Creamy and flavorful low-sugar and fat-free fresh peach frozen yogurt!|
Food blogging is different from ordinary cooking in an important way, because if you cook something amazing but you don't have photos that make it look good, you can't share that recipe on your blog. When I set out to record the deliciousness of this Low-Sugar and Fat-Free Fresh Peach Frozen Yogurt, the first time I overestimated the recipe and the ice cream freezer overflowed, and the second time I accidentally deleted the process photos before I saved them on my computer. The third time was the charm though, and now I have a bunch of little containers of this frozen yogurt in the freezer, in a size that guarantees portion control! I got my peaches from the fabulous Trina, and I heard over the weekend from a reliable source that fresh peaches are still abundant, so I hope you'll try this before they're gone for the year.
I actually made two versions of this in my experiments, and I know people have different preferences for sweeteners, so I'll share them both. One version had Stevia In the Raw granulated sweetener and a few tablespoons of brown sugar, plus sugar-free apricot preserves (which contains Splenda.) The other version used the same Stevia in the Raw with a touch of brown sugar in the main mixture, but replaced the apricot jam with another cup of peaches that was pureed, mixed with a little more Stevia, and then cooked down to make a replacement for the jam. (You could actually replace the brown sugar in either version with Stevia as well, if you wanted even less sugar.)
The version I started with was flavored with two cups of peeled and diced peaches and 1/2 cup sugar-free apricot preserves. (I couldn't find peach jam, but the apricot was a nice complement to the peach flavor. The yogurt still tasted more like peach than apricot, which is why I didn't call it Apricot-Peach frozen yogurt!)
Puree the peaches in the food processor until they're quite smooth. (I made a chunky version one time, but I liked the smooth yogurt best.)
(Note: If you don't want to use the sugar-free apricot preserves, or have a lot of peaches but no jam, chop up one more cup of peaches, puree them with 1/4 cup Stevia In the Raw granulated sweetener, then put them in a small pan and simmer until the mixture is reduced to 1/2 cup. Let this cool well before you add it to the rest of the ingredients.)
After you've pureed the 2 cups of peaches, add the Stevia In the Raw granulated sweetener, 2 tablespoons of brown sugar (or more Stevia), 1/2 cup sugar-free apricot preserves, and 2 cups Fage Fat-Free Green Yogurt. Puree until it's well combined.
Pour the mixture into your ice cream maker, and freeze according to manufacturer's directions. I used the Cuisinart 1-1/2-Quart Ice Cream Maker which somehow ended up in my cart at Costco, and you need a freezer that's at least 1 1/2 quarts for the quantities in this recipe.
I love these containers which hold just one good scoop of frozen yogurt. If you're freezing some of the yogurt to eat later, you need to allow 20-30 minutes for it to thaw (or microwave for a minute or two on medium-low if you can't wait!)

I used a Cuisinart 1-1/2-Quart Ice Cream Maker to make this frozen yogurt. You may need to adapt the recipe if you're using a different size or make of ice cream freezer.
generous 2 cups of peeled and diced fresh peaches
1/2 cup sugar-free apricot preserves or any low-sugar apricot jam
(see note at the end if you want to replace the apricot preserves with more peaches)
1/2 cup Stevia In the Raw Granulated Sweetener or Splenda (or use sugar if you don't care if the frozen yogurt is low-sugar)
2 cups Fage Total 0% Greek Yogurt (or use any plain or Greek yogurt of your choice if you don't care if it's fat-free)
For the ice cream maker I have, the container must be well-frozen before you mix the ice cream. Follow instructions for the model you have.
Peel the peaches, remove pits, and cut into smallish chunks. (If your peaches are hard to peel, you can dip them into a pan of boiling water for a few seconds, but the peels came right off on the peaches I had.) Put peaches into food processor fitted with a steel blade and process until they are pureed. Add sugar-free (or low-sugar) apricot preserves, and Stevia in the Raw Granulated (or sweetener of your choice) and fat-free Greek yogurt and process just until the mixture is fully combined.
Put the container into the ice cream maker and sit the scraper blade in place. Put lid on and pour the peach-yogurt mixture in with the motor running. Let the yogurt freeze with the blade running for 25-35 minutes. (I left it freezing for 35 minutes this time.)
If you don't eat all the frozen yogurt right away it can be frozen to eat later, but allow about 20-30 minutes at room temperature for the yogurt to soften after it comes out of the freezer, or you can also microwave it for about a minute or two on medium-low.
If you don't want to use the sugar-free preserves, or you just have a lot of peaches to use you can make your own peach preserve mixture. Peel and dice one cup of peaches; then puree it with 1/4 cup Stevia (or sweetener of your choice.) Put the mixture in a small pan and simmer on very low heat, stirring often, until the mixture thickens and reduces to 1/2 cup. Let this cool very well before you add it to the other ingredients.
South Beach Suggestions:
There could never be sugar-free fresh peach frozen yogurt due to the natural sugar in the fruit. I also chose to use a small amount of brown sugar in this yogurt to complement the flavor of the peaches, but as long as you use either Stevia In the Raw grunulated sweetener or Splenda for the rest of the sweetener (and use sugar-free preserves or sweeten the additional peach puree with Stevia or Splenda) I would still eat this in small amounts for Phase 2 of the South Beach Diet. For Phase 3 you could have a larger serving.
I chose the South Beach Diet to manage my weight partly so I wouldn't have to count calories, carbs, points, or fat grams, but if you want nutritional information for a recipe, I recommend entering the recipe into Calorie Count, which will calculate it for you.
