South Beach Diet Phase One Recipes Round-Up for February 2013 (Low-Glycemic Recipes)

Collage of South Beach Diet friendly recipes
My favorite Phase One Recipes from February 2013 include CrockPot (or stovetop) Black Bean Chili with Lime and Cilantro, Baked Eggs with Mushrooms and Parmesan, Vegetarian Greek Lentil Casserole with Bell Peppers and Feta, and Fattoush-Inspired Chopped Salad with Buttermilk-Tahini Dressing, Chickpeas, Sumac, and Pine Nuts.

Before I send you off to look at South Beach Diet Phase One low-glycemic recipes I posted during February or spotted on other food blogs, I have some pretty exciting news to share.  After saving my money for years and looking at houses for months, I am moving to a new house later this month!  I'll be moving back to the city where I grew up just north of Salt Lake, where I'll be much closer to family members, (including many, many cute little kids that I might get a chance to babysit now that I live closer and have a playroom.)  I love my new house, and promise to share a few kitchen photos once I get moved in.

Sorting through and packing up all the stuff I've accumulated in 25 years at my current house is going to be a rather daunting job (especially since my broken arm is still limiting what I can lift) and I'm guessing that the posting schedule here might be a little lighter than usual this month. But I'm grateful to the many family members and friends who have offered to help, and I should be somewhat settled into the new house by late March.

Now, let's get back to the food.  I think I've been a little distracted this month (you think?) but I did manage to bookmark some pretty fabulous sounding recipes from other blogs.    Of course, every month I find things that can be made Phase One with minor changes, so those adaptations are noted after the recipe links.  And if you're a food blogger who's posted something that might be a new idea for Phase One, see after the recipe links for how to submit it.

(You can use the label Low-Glycemic Recipe Round-Ups to see all the posts like this one.)

Did I Miss Your Phase One Recipe?
Phase one menus for the South Beach Diet focus on lean meats, seafood, eggs, dried beans, soy products, low-fat dairy products, nuts and seeds, and most vegetables. Phase one doesn't permit fruit, alcohol, bread, rice, pasta, potatoes, sugar, or any foods high in saturated fat. Obviously I miss lots of phase one recipes, so if you're a food blogger who posted a recipe this month that you think would be approved for phase one, please feel free to e-mail me the link at kalynskitchen (at) comcast (dot) net. I'll take a look, and if the recipe is phase-one friendly, I'll add it to next months roundup.  (Since I've been doing these Round-ups since March 2008, occasionally I may decline a recipe if the same thing has been featured several times already.  Please don't leave recipe links in the comments. They will not be published.)

Yes, congrats on the new house and hope the move goes smoothly! Will the new house have a big garden??

Thanks for the house congrats everyone. Maura, the new house has a very small garden that's not located where I'm going to want it. Not sure if I will get the new garden done for this summer, but eventually it will!

New kitchens always inspire new recipes, so I can't wait to see what your new kitchen will inspire. Wishing you wonderful cooking (and gardening) in the new house.

Congratulations on the new house!
As a veteran mover, I have learned to not spend too much time "sorting" through my stuff (mine and four kid, hb packs his own). I have always three boxes at the ready: one for things I know immediately that they weill go to the new home, the second one for "later decision" (i.e. will move, but be labeled "later"), and a third one for stuff I leave behind (charity, dump, whatever). That saves time and l am not totally exhausted once I move into the new home. Good luck!

Thank you for the wonderful recipe collection, much appreciated!

Thanks Lydia. I do think the space is going to be one that inspires a lot of good food!

Merisi, I've only moved a few times in my life, so I need that advice, thanks!

Packing and unpacking a kitchen is one of the most mind-boggling tasks let alone taking it on with an arm that isn't 100%. So excited for you! And this round-up of recipes has me salivating (and jotting a few on my list to make) especially that black bean chili.

Congratulations on the new house! Can't wait to see pics of your new kitchen. My husband and I moved into our first home last year, and I really love having a kitchen with counter space!

Kalyn Denny said...

Kelly, haven't even really started on the kitchen. I'm having plenty of trouble with the office though.

Thanks Janet. There will be a big garden in the future, but just a tiny one right now.

Laura Jane, I agree, nothing better!

Apologies to Karen, because it seems I accidentally deleted her comment. Karen, you're so sweet to offer to help! I think I'm ok, I have a lot of relatives!
